It was about 3.30 am when I woke up, I vaguely looked around to check on the kids. I could see Pedhu next to me, then wondered where Chinnu was. When I switched on the light, I saw him asleep hugging his sister. On sensing the light on, he woke up and in daze came back to his place and immediately went back to sleep. None of them can sleep in their place, never in the same place they go to sleep and always having a leg on the other or a hand. Many times I wake up at nights to position them again.

I was very restless and the reasons were so funny. It was almost like it was my first day at school. Whether the kids have that restlessness or not, I always have it and think for the hundredth day if I had all their stuff ready. The boys were starting their first standard today. Yesterday being Sunday, they had fun through the day and almost spent the whole day before the tele. I didn’t have the heart to say no. Result was they went to bed very late and wouldn’t wake up on time this morning. With lots of cajoling and threatening we got them ready. As always I was ready with the camera to click their picture before they left in their fine uniform. Athamma even made sure they had their heavy bags on them.

They got so many books, I was shocked and in coma for a while, seeing the huge pile of books that needed to be covered. Luckily this year again FIL came to rescue. He did the job non stop in two days and had them all neatly covered and Konda labeled all of them. It took me an entire day to just write their names and sort. We were so worked up thinking how on earth will be the boys be carrying that huge load. So we went to drop them and carried the books along with us. Only to be told by the teachers that they didn’t expect the books on the first day!

When they came back home, I called up to ask what they did. Pedhu always sound cherubic over the phone, he said all they did through the day was paint and that they didn’t even have their afternoon nap.

Coming back to the recipe, this was something that Konda loved for her breakfast. Well knowing it’s paneer and on bread, I am sure it was a known thing anyway.

Spicy Paneer on Toast | Curried Paneer Toast 
Ingredients Needed

Bread Slices – 4
Paneer, crumbled – 1/2 cup
Onions – 1/2 medium
Ginger Garlic paste – 1/2 tsp
Salt to taste
Butter for roasting
Red chili powder – 1/2 tsp
Roasted Cumin powder – 1/2 tsp
Kitchen King Masala – 1/2 tsp

How to make curried paneer toast

Crumble Paneer and keep it aside.

Heat a non stick pan, add oil, saute onions till they turn colour. Add ginger garlic paste.

Then add the paneer and mix well. Add in the spices and salt. Adjust the spice.

Trim the bread slices and apply butter on both sides, toast on a hot tawa.

Place the stuffing on one slice and press the other firmly.

Roast on both sides till it becomes golden colour

Serve with ketchup
