We are into the third week of Blogging Marathon and I will be cooking with Greens. When I selected this dish, I wanted to make sure I tried all the different dishes that I had bookmarked. However today’s recipe is from Amma. She makes it for snacks and makes a healthy one as it’s steamed and then fried in very little oil. Still it tastes very good as the outer layer gets crispy.
I almost didn’t do today’s post, I am just hurrying with a last minute one. It’s going to be a long weekend for kids as they have holiday for three days. While I will have office, I was only feeling sorry for Athamma as she was saying it’s going to be a long week with kids at home. I can understand her plight, it’s going to be non stop hungamma with the kids running around and she will simply go crazy. I know she thinks I am lucky to escape to work.:)
Anyway back to this simple and delicious one.
By the way under Cooking with Greens, I decided I can make it more interesting by giving different combination. My combination requires I make a dish as the main Ingredient, Mixed with a tuber, Deep fried/Steamed. So enjoy!
Besan / Gram Flour – 1/2 Cup
Ginger Garlic paste – 1/2 tsp
Green chilies – 2
Red Chili powder – 1/2 tsp
Amaranth leaves / Thota Kuraakku – 1 bunch
Sesame seed – 3/4 tsp
Grated coconut – 1 tbsp
Salt to taste
Oil – 2 tsp
Red chilies – 2 -3 long
Coconut, grated – 1 tbsp
Mustard Seeds, Urad dal – 1/2 tsp
Curry leaves few
How to make the Dumplings:
Wash and pick the amaranth leaves, chop it finely. In a bowl, mix all the ingredients for the dumplings. With little water, make tight balls and steam cook for 15 mins in sim.
Once it’s cooked, remove and in a non stick pan, heat oil. season with mustard, urad dal, curry leaves and red chilies. Stir everything well and add the steamed dumplings.
Cook for couple of minutes, then add the grated coconut on it and serve hot.
