Chatamari | How to make Nepali Pizza

Chatamari is a Nepali Pizza, popular as a street food. This is a sort of pancake made with Rice flour, topped with eggs and vegetables, cooked on the stovetop. Popular versions include chatamari topped with minced meat or even just vegetables and mostly topped with cheese and egg.

Ingredients

For the Rice Layer

  • 1 cup Rice Flour
  • Salt to taste
  • Pepper to taste

For the Besan / Chickpea Layer

  • 1/2 cup Besan / Chickpea Flour
  • Salt to taste
  • Pepper to taste
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Cumin Powder
  • 1/4 tsp Coriander Powder

For the Vegetable Layer

  • 1/2 Onion finely chopped
  • 1 Tomato finely chopped
  • 1/4 Capsicum finely chopped
  • 1 Green Chilli finely chopped
  • A Pinch Turmeric Powder
  • Salt to taste
  • 1/4 cup Coriander Leaves finely chopped

Other Ingredients

  • 1 tsp Butter per chatamari
  • 4 tbsp Mozzarella Cheese

Instructions

For the Rice Layer

  • In a bowl, mix the Rice Flour, Salt and Pepper. The consistency should be very thin and you should be able to pour the batter and swirl it on the pan.

For the Besan / Chickpea Layer

  • In a bowl, take the Besan, add Salt, Pepper and other spice powders. Add water and make a thin batter. Let this set for 2 mins, while you prep the vegetables.

For the Vegetable Layer

  • Shred all the vegetables very fine or thin. You can mix all the vegetables together with the seasoning and let it sit for a couple of minutes, while you prepare the layers.

Assembling the Chatamari

  • Heat a nonstick pan with butter, quickly pour a ladleful of Rice batter and swirl it around to coat well.
  • Simmer and pour the chickpea batter into circles and not completely covering the rice layer.
  • Top it with the chopped vegetables and finally garnish with grated cheese. Cover with lid for the cheese to melt.
  • This entire Chatamari needs to be cooked in slow flame.
  • Serve hot with a sauce on side.

Notes

The original recipe calls only for cooking oil. I added butter to make it more interesting. This is a typical Vegan dish.
