Johnny Cake from Belize

Johnny Cakes are quick bread served with either sweet or savory side dish for breakfast in Belize. These are mildly sweet, has the nutty coconut flavour.

  • 2 cups All Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 4 tbsp Butter
  • 1/2 cup Coconut Milk or coconut cream


How to make Johnny Cake

  • In a wide bowl, mix flour, baking powder and salt. Add the butter, and mix with your fingertips till you get a crumbly texture.
  • Next, add the coconut milk and knead quickly until forming a smooth ball.
  • Now, divide the dough into golf sized balls. Place the balls on a baking sheet lined with parchment paper and let stand for 10 minutes.
  • Then, slightly flatten the balls. Prick in several places with a fork.
  • Pre-heat oven to 200 C. Bake for 10 to 15 minutes. Times vary greatly from one oven to another, so pay close attention to the color of the Johnny cakes.
  • Allow to cool down for 10 minutes, enjoy Johnny cakes hot or warm, open and filled with sweet or savory ingredients.
  • I served mine with jams and it was so yum!
