Dark Ganache Truffles

  • 1 cup Dark Chocolate Compound
  • 1/4 cup Milk Chocolate Compound
  • 1 cup Fresh Cream
  • 1/4 cup Cocoa Powder


  • Chop the chocolate compounds, take in an MW safe bowl. Microwave for a minute.
  • Whisk with a spatula to mix, MW again for a minute. Add the cream, MW for another minute.
  • Whisk again and MW for another minute. Bring to room temperature and refrigerate for a couple of hours.
  • Once it sets, use a scoop and scoop out balls, roll each in cocoa powder and serve.


I mostly follow a ratio of 2:1 Chocolate with Cream for my truffles. Sometimes I use butter as well.
