Sweet Corn Chat Rice

If you like Sweet Corn Chat, then you will love this twist with the spicy sweet corn chat, cooked with rice. This is a wonderful idea to reuse leftover rice and for packed Lunch.

Ingredients

For the Rice

  • 1 cup Cooked Rice
  • 1 cup Sweet Corn Kernels
  • 1/4 medium Onion julienne
  • 1/4 tsp Ginger Garlic Paste
  • 1 tsp Cooking Oil
  • A Pinch Garam Masala

For the Masala

  • 1 tsp Butter
  • 1/2 tsp Chat Masala
  • 1/2 tsp Red Chilli Powder
  • Salt to taste
  • A Pinch Kala Namak
  • 1/4 tsp Amchur Powder

Instructions

Cooking the Sweet Corn

  • Wash and microwave the sweet corn kernels with enough water for 10 mins.
  • Drain the kernels and add butter and all the masalas. Mix well and micro again for a minute.

For making the rice:

  • Heat a nonstick pan with oil, add onions, saute till it’s almost brown. Add ginger garlic paste, cook for a couple of mins.
  • Then add the cooked corn kernels, mix well.
  • Adjust the masala if required.
  • Add cooked rice, mix well. Finally, sprinkle a small pinch of garam masala and coriander leaves.
