Ingredients
For the Ground Masala
1/2cupCoconutgrated
10Cashew NutsWhole
1tspGaram Masala
For the Gravy
150gmsBrinjallong varity
2tspCooking Oil
1/4tspCumin seeds
1/4tspPeppercornswhole
1/2cupOnions
2longGreen Chillifinely chopped
1tspRed Chilli powder
1tspCoriander powder
A Pinch Turmeric powder
Salt to taste
1/4cupCurds/ Yogurt
Wateras required
Coriander leavesfor garnish
Instructions
To make the ground masala
In a mixer take all the ingredients for the masala and grind to a fine paste by adding water as required.
For the gravy
Heat oil in a nonstick pan, fry cumin seeds, peppercorns. Then add chopped onions, finely chopped green chilies. Saute for a couple of minutes.
Chop brinjals as vertically long, then add them to the pan. Saute well. Then add chili powder, coriander powder, turmeric powder, and salt. Continue sauteing.
Now add the paste and saute for a couple. Next, add 1/4 cup curds. Add water as required. Bring to boil, garnish with coriander leaves.
