Wash and pat dry the mango, and peel off the skin from the mango. Grate and keep it aside.
Heat oil in a pan and add mustard seeds, curry leaves, Urad dal, channa dal, cashew nuts, and raw peanuts, and saute. Stir for a couple of seconds, add hing, red chilies, green chilies, and curry leaves.
Stir a couple of times and make sure the peanuts are cooked.
Next, add the grated mango and fry in oil for 5 - 6 minutes until the oil starts coming out.
Add salt and turmeric powder and mix well.
Finally, add the cooked rice, and combine everything gently until it is well mixed and the rice is coated with spices and grated mango.
Serve with Papad or any roast, or gravy.
