Ingredients

  • 1 cup Rice cooked
  • 3/4 cup Raw Mango grated
  • 3 Red Chilies
  • 2 Green Chilies
  • A sprig Curry leaves
  • 1/4 teaspoon Mustard Seeds
  • 1/4 teaspoon Urad Dal
  • Handful Cashew nuts
  • 1/4 teaspoon Chana dal / Bengal Dal / Chickpea split
  • Handful Raw Peanuts
  • A pinch Asafoetida / Hing
  • 1/4 teaspoon Turmeric Powder
  • Salt to Taste
  • 1 tablespoon Cooking Oil

Instructions

How to make the Rice for Mango Rice

  • Wash, and soak the rice for 15 mins. If you are cooking 1 cup of rice, add 2.5 cups of water and cook it. Let it cool completely and keep it aside.

Making the mango masala for the Rice

  • Wash and pat dry the mango, and peel off the skin from the mango. Grate and keep it aside.
  • Heat oil in a pan and add mustard seeds, curry leaves, Urad dal, channa dal, cashew nuts, and raw peanuts, and saute. Stir for a couple of seconds, add hing, red chilies, green chilies, and curry leaves.
  • Stir a couple of times and make sure the peanuts are cooked.
  • Next, add the grated mango and fry in oil for 5 - 6 minutes until the oil starts coming out.
  • Add salt and turmeric powder and mix well.
  • Finally, add the cooked rice, and combine everything gently until it is well mixed and the rice is coated with spices and grated mango.
  • Serve with Papad or any roast, or gravy.
