Ingredients

  • 2 cups Potatoes
  • 4-5 Tomatoes
  • 1 inch Ginger
  • 2-3 Green Chillies
  • 1 teaspoon Asafoetida / Hing
  • Salt to Taste
  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Seeds / Jeera
  • 1/4 teaspoon Turmeric Powder
  • 1/2 teaspoon Garam Masala
  • 2 tablespoon Cooking Oil
  • Water as required for gravy
  • Coriander Leaves for garnishing

Instructions

How to make Tamatar Aloo ki Sabzi

  • In a mixer, take the chopped tomatoes, ginger, green chillies and grind to a smooth paste. Keep aside.
  • Heat a pressure cooker with cooking oil. Add hing, cumin seeds and let it crackle.
  • Next, add all the spice powders, stir well to mix everything. Add little water to ensure the spices don't get burnt.
  • Now add tomato puree and combine well.
  • Cook until everything combines and gets cooked well, and you see oil coming out on the sides.
  • Next, add cubed potatoes, stir well.
  • Add salt and water for the gravy. Mix everything and close with a lid. Pressure cook for 3 whistles. Let the pressure fall.
  • You can mash few potato pieces to make the gravy thicker.
  • Add fresh coriander leaves
  • Serve this Tamatar Aloo ki Sabzi with besan ki masala pooris.
