Ingredients

For the Kulchas:

  • 2 cups Wheat Flour
  • 1/4 cup Milk
  • 1/4 cup Curds / Yogurt
  • 1 tsp Baking powder
  • 1/2 tsp Baking Soda
  • Salt to taste
  • 2 tbsp Cooking Oil

For Paneer stuffing:

  • 1.5 cups Paneer grated
  • 1 tsp Red chili powder
  • 1/4 tsp Cumin powder
  • 1 tsp Garam Masala powder
  • Coriander leaves handful finely chopped
  • Salt to taste

Instructions

Preparing the dough:

  • In a wide bowl, sieve the flour along with baking powder, baking soda. Add salt, curds and mise well.
  • Gradually add the milk to knead a soft pliable dough.
  • Knead it for some 5 minutes until the dough becomes very soft.
  • Cover with a cloth and let it rest for 10 minutes.

Preparing the paneer stuffing for the healthy kulcha

  • Grate the paneer in a bowl, add the red chili powder, cumin powder, salt, garam masala, and coriander leaves.
  • Mix everything well. Divide into small sized balls.

Making the stuffed kulcha

  • Divide the dough into equal balls. Take one ball, keep rest covered.
  • Flatten the balls on the sides, keeping the center thicker.
  • Place the filling in the center, gather from the sides and fold it well to enclose the ball fully.
  • Dust dry flour and gently roll out a disc keep it on a thicker side.
  • Heat a nonstick pan, grease with oil, and cook the kulchas on both sides.
  • Serve with curds and pickle of choice.
