I pack lunch for all of us. While I make south Indian meals for the elders, its always either one pot meal or parathas for the kids. Kids prefer mess free, hands free lunches. Also they hardly ever spend time on eating during lunch breaks.
So packing Kid's lunch boxes for school has always been a challenge and I have donned my creating hat many times. We also need to ensure they get a balanced meal that keeps them going through the day.
I plan alternate healthy options when making parathas. For today's Lunch box, I decided to make the kulcha healthy as these were getting packed for Konda's lunch box. This recipe is part of the Lunch Box Dish for Kids under Blogging Marathon.
When it comes to our meals, I always plan ahead, have a menu prepared and try to follow it mostly. It helps and makes it stress free, if we plan it during the weekend, shop for it and keep things ready.
Ingredients you will need to make healthy Kulcha
For the Kulchas:
Flour - In this healthy version of kulcha, I have used whole wheat flour. To still keep it soft and good, I have used baking powder and baking soda.
Liquids - I have used curds along with 1 tsp oil in the dough, once you mix it well, you can add milk to get a proper dough.
For Paneer stuffing:
Paneer - Homemade paneer is always the best. However, if you are using store bought paneer, make sure to soak it in hot water for 10 mins before grating it.
Spice powders - I have used Red chili powder, roasted Cumin powder and Garam masala powder.
Herbs - Coriander leaves handful

How to make the Kulchas - Step by Step
Preparing the dough:
In a wide bowl, sieve the flour alon with baking powder, baking soda. Add salt, curds and mise well.
Gradually add the milk to knead a soft pliable dough.
Knead it for some 5 minutes until the dough becomes very soft.
Cover with a cloth and let it rest for 10 minutes.
Preparing the paneer stuffing for the healthy kulcha
Grate the paneer in a bowl, add the red chili powder, cumin powder, salt, garam masala, and coriander leaves.
Mix everything well. Divide into small sized balls.

Making the stuffed kulcha
Divide the dough into equal balls. Take one ball, keep rest covered.
Flatten the balls on the sides, keeping the center thicker.
Place the filling in the center, gather from the sides and fold it well to enclose the ball fully.
Dust dry flour and gently roll out a disc keep it on a thicker side.
Heat a nonstick pan, grease with oil, and cook the kulchas on both sides.
Serve with curds and pickle of choice.
Total time for cooking: 30 mins

Why this healthy Wheat Kulcha recipe works!
Kids always love paneer, especially when you cook it in a paratha and send for lunch.
This is Konda's favorite one as I have sent it many times for her lunch box.
Kulchas are normally made with Maida. Since I was sending it for her afternoon meal, I replaced it with whole wheat and add curds and baking powder to the dough. This makes sure the kulchas stay soft for afternoon as well.
Since its atta, making it in the morning rush hour is easy.
Planning for Lunch Box for Kids
- If you are planning to make fried rice, its best to cook the rice the previous night and refrigerate. This improves the rice texture and also makes it easy for us cook quickly.
- Always include protein in their meal. I always stock paneer, boiled chana, corn, potato etc.
- I also have frozen herb paste that helps in making pulao very quickly.
- Kid friendly vegetables like carrot, peas, potatoes are always included in some form.
