    Tomato Soup with Cheese toast ~ Easy Colourful dishes for Kids

    When I started thinking of the second day, I was so confused. Well I confessed that I had a hard time thinking of actual colours when I had to make the plate very colourful. so it took some planning. It all happened over a period of time. We make Mixed Vegetable Cream Soup, as part of our regular diet. Best part is that even my boys love that soup. So I was wondering if I could try some other soup on them. Though I used to make roasted tomato soup for myself, I don't think I have actually given it to the boys.
    This tomato soup makes a wonderful diabetic food as it is healthy and apt. If you want you can skip the butter/ghee, thought I have added just a teaspoon.
    I decided I will make it along with something else to make it a colourful plate. So when I think of my kids, I natually think of toast, cheese and what I can top it with.
    Thus got created a colour platter of Cheese toast with Tomato Soup. Though this Tomato Soup is almost similar to what I have already posted, little changes made a whole lot of differences.

    Roasted Tomato Soup 2

    Ingredients Needed:
    Tomatoes - 2 medium
    Carrot - 1 small
    Onion - 1 medium
    Clove - 1
    Cinnamon - 1 "
    Mint Leaves - 5
    Salt to Taste
    Pepper to Taste
    Milk - 2 tbsp (opt)
    Oil - 1 tsp
    Butter/ Ghee - 1 tsp
    Garlic - 2 cloves
    How to prepare TOmato Soup
    Heat a pressure cooker with oil. Sauté chopped onions, garlic, cloves, cinnamon and mint leaves. Then add chopped tomatoes and carrot. Stir well.
    Stir for 2 mins, then add 1 cup of water and pressure cook it for 1 - 2 whistles. Once its done, remove the clove and cinnamon.
    Grind the rest to a smooth paste. Cook it again for 5 mins. Add salt and pepper, water if required. Simmer and slowly add milk. Bring to boil.
    Serve it hot with Cheese toast
    Cheese Toast
    Ingredients Needed
    Bread Slices, cut into circles
    Chedder Cheese, Mozzerrella Cheese as required
    Green Bell Pepper, finely chopped - 2 tbsp
    Firm Tomato, finely chopped - 2 tbsp
    Italian Seasoning as required
    Red Chili flakes as required
    Butter - 1 tsp
    How to make the Cheese Toasts
    Using a big cookie cutter, press into the bread slices to make a circle.
    Heat a tawa, toast the bread slices on both the sides in butter.
    On one side, spread the cheese, top it with capsicum, tomato, italian seasoning, red chili flakes. Cook for a min.
    MW for 30 secs and serve hot with Tomato Soup

      Varada My elder twin liked the cheese toast, Chinnu doesn't eat bread. However both of them had the soup though..:)..Glad you approved as well!

      You won't believe if I say I've never made tomato soup from scratch.....your colorful plate is so tempting Valli....I love the cheese toast ...its gooey and I'm so drooling here!
