    Ice Cream Sandesh is an interesting twist to the kulfi made with fresh Chhana or paneer. This only requires 4 ingredients and you just blend and freeze!

    From the moment I made my list, I knew I had to do something with Ice cream for alphabet I. I searched wondering if I will find anything for this letter but came to a dead end. Then I realized I had to go ahead with Ice cream and wanted to create a frozen dessert with kulfi in mind.

    Apart from Ice Creams, I love making Kulfis, which is much simpler to make than Ice cream. When I had this on the list, I really didn't think much about the recipe. The day I made this dish, I simply used the fresh chhana and didn't even knead it as we will anyway blend it. I just added all the other ingredients, blended, and froze. I used individual silicone molds as it is easy to unmold and serve as a single portion. This really works like a charm every time. Kids were delighted to see the hearten with creamy kulfi.

    My boys enjoyed it so much that they were saying I didn't make enough. Obviously, I didn't reveal that it had paneer in it. As they were seeing me in the last few weeks with a plate full of fresh paneer and I kept kneading it, they asked for how much longer will be making paneer like this.

    I said they should at least taste the sweets I was making. Later, when kids were enjoying chocolate ice cream, I served one to Hubby dear and he too didn't guess what happened. I know I should have revealed it later. Anyway, Konda knows and was happy I shared the secret with her.

    This was one of my easiest dishes I did for this series. I only made the soft chhana that's required for making the Bengali Sweets. I didn't knead the chhana portion needed for making the Ice Cream as I was going to blend it along with the other ingredients.

    Ingredients

    1 cup Paneer / Chhana / Cottage Cheese
    1/2 cup Condensed Milk, increase if required
    Mixed Nuts for garnish
    1/2 cup Khoya
    1/2 cup Cream

    Instructions

    Once you have the soft chhana prepared for making Bengali sweets, take the chhana in a mixer.
    Add the condensed milk, fresh cream, khoya and blend to a soft and smooth paste.
    Transfer to a single serving bowl, if you use silicon, its best to unmould and serve.
    Freeze overnight or for at least 4 to 6 hours.
    Garnish with chopped nuts.

    Ingredients

      I is a tough alphabet to find recipes , and Icecream definitely fits very well . A frozen Sandesh sounds so interesting , excellent take on Sandesh and what a rich ice cream !

      The plate looks straight out of a restaurant menu, but good to know that the effort involved isn't that extensive. No wonder the kids complained about not enough servings 🙂

      I am drooling here Valli. The heart shaped kulfis look so beautiful. Nice to know that the boys enjoyed it without knowing the ingredients. Looking at all the posts I can guess the amount of paneer you have kneaded last month. Lol.
