    Nachos Supreme is a delicious sinful street food from the Tex Mex Cuisine. Since this food is so versatile that you can practically load it as much as you wish. This has a layer of fried tortilla chips loaded with different layers, finally with melted cheese!

    I had this ever since I came to know about it and always wanted to go the extra mile to make it as interesting as possible. This is also the dish I did just before posting it. I had the different components ready and froze until I could get time to make it and in the end, all it took was just about 15 to 20 mins to get the final dish done. I really wished I had taken the efforts to do this over the weekend for clicking better pictures.

    I used the same Soya Granule Masala. As I had mentioned I am not fond of soya and didn't even expect the granules to be even more strong in taste. Since I made a huge batch of it, I prepared all the dishes that required this component. I had the rajma soaking and stored in the fridge for over a week. I have few other things also stocked like this and couldn't get to them. Time is so short and especially killing if you have to write two posts a day that also requires so many other trimmings.

    Anyway, I checked my bookmarks and saw I had Mir's post to refer to. After reading through it and a few more on the net, I decided to have multiple layers as Konda is really so fond of Mexican cheesy stuff. My niece has come down to visit us as she has completed her ten grade and has a long vacation. Though I have asked her to list out any new favorites that she wants me to cook, I will be anyway cooking her favourite dishes this week.

    Coming back to this dish, I was planning on making it during weekend evenings but got distracted. So I ended up making it as I cooked our breakfast and lunch. I was only able to click some quick ones from my mobile and really regret not making it ahead. I confirmed later with Konda and I got so many hearts when I asked about the dish. I was happy enough, to say the least!

    Since I have repeated Italy about 2 times already I wasn't prepared to make Neapolitan Style Pizza, although this has been on my list forever! Likewise, I had to drop Nam Manao which is Thai Limeade for the same reason as only savoury street foods.     Nachos Supreme | How to make Vegetarian Nachos Supreme

    Ingredients Needed:

    For the Minced Soya Granules

    1 cup Soya Granules
    A Pinch Turmeric
    A Pinch Salt
    Water as required
    2 tsp Cooking Oil
    1 cup Onions finely chopped
    1 Bay Leaf
    1 cup Tomato Puree
    1 tsp Red Chilli Powder
    1 tsp Coriander Powder
    1 /2 tsp Garam Masala
    1 /2 Cumin Powder
    Salt to taste
    4 to 5 Cashews

    For the Beans / Rajma

    1 cup Rajma
    1 /2 cup Onions
    Salt to taste
    1 tsp Cooking Oil
    1 tsp Red Chilli Flakes
    1 /2 tsp Cumin Powder

    For the Nacho Cheese Sauce

    2 tsp All Purpose Flour
    1 tsp Butter
    1 cup Milk
    Salt to Taste
    Pepper to Taste
    1 cup Cheddar Cheese
    1 tsp Garlic Powder
    1 tsp Onion Powder

    For the Tortilla chips

    1 /2 cup Corn Flour
    1 /2 cup All Purpose Flour
    Salt to taste
    Salt to Taste to sprinkle after frying
    Pepper to Taste to sprinkle after frying
    Cooking Oil for deep frying

    Other Ingredients

    1 / 2 cup Mozzarella cheese
    1 /2 cup Cheddar Cheese I used what is called a Pizza cheese that is a mix of these two.
    1 cup Onion Tomato Salsa
    1 tsp Red Chilli Flakes

    How to make Nachos Supreme

    For the Minced Soya Granules

    Bring a pot of water to boil along with turmeric and salt. Add soya granules and let it cook for a couple of minutes. Drain it in a colander for a while till all the water drains away. If required you can further squeeze to make the granules very dry.
    Heat a nonstick pan with oil, add bay leaf, and then finely chopped onions. Saute well.
    Add the soya granules and saute till it becomes dry.
    Add all the spice powders and combine well.
    Then grind soaked cashews along with tomatoes to a fine puree
    Combine all and simmer for 10 mins till the soya granules get cooked in masala well. Keep it aside.

    For the Beans / Rajma

    Wash and soak the rajma overnight and change water couple of times.
    Pressure cook with enough water for about 4 to 5 times or till done.
    Drain water and keep it aside.
    Heat a nonstick pan with oil, saute onions till it changes colour.
    Add the cooked rajma and spice powders and cook in low flame for 5 mins.

    For the Nacho Cheese Sauce

    In a nonstick pan, melt the butter and fry the flour till it is done about 4 to 5 mins.
    Add milk and cook on low flame. Add salt, garlic powder, onion powder and pepper along with grated cheese.
    Cook for few minutes and remove. Allow it to cool.
    Pulse to a smooth paste and continue to add more milk and water as per the consistency needed.
    I normally make a huge batch of this and freeze.

    For the Tortilla chips

    In a bowl mix the corn flour and all purpose flour, salt with enough water to form a soft dough.
    Dust well and roll out a thin disc of about 9 inch diameter.
    Prick with a fork all over for it not to puff up.
    Cut into triangles.
    Heat oil and deep fry these chips.
    Drain to a bowl and sprinkle salt and pepper.
    These make a great snack as such!

    Assembling the Nachos Supreme

    Lay all the fried Tortilla Chips on a serving plate
    Top it with Cooked beans and Soya granules
    Top it next with Cheese Sauce
    Next goes the Salsa
    Finally cover it completely with grated cheese.
    Microwave the plate for 30 secs.
    Your Nachos Supreme is ready to enjoy!

      Wow !..a perfect wholesome dish..so rich in protein. I have never used soya with nachos, but it definitely takes the dish to another level. Hats off to your planning Valli..I must say we all need to learn so much from you.

      These are my favorite. I just use some tortilla chips, beans, enchilada sauce, cheese and bake it for the quicker version but you have done everything from scratch. As always you rock.

      By adding soy mince to the nachos you've made it into a filling and wholesome meal. I love nachos with loads of melted cheese on top. I usually use beans, corn, chopped tomatoes, peppers. Love you homemade nachos.

      wow the nachos look amazing and the pictures are fantastic valli, You sure did make this dish super interesting no doubt with choice of topping. My hubby isn't fond of soya granules as well so I make use of them very rarely .. Your niece is so lucky to have a athai like you 🙂 Fantastic pick for the letter valli.. am amazed how manage your time in preparing such fabulous recipes as it needs lots of efforts and planning .. I remember making Nam manao for bm, do post the other 2 recipes that you planned soon 🙂

      Nacho supreme is one of the most famous food in any Mexican joint here and unfortunately we vegetarians can never eat it out. It is always made with beef. I like your vegetarian version and wish I had better experience with soya granules. I have cooked with it couple of times and it so closely resembles meat that I could not get myself to like it. I use some beans when making it 🙂
