    Paneer Pulao, Stuffed Chilies

    For the second day of making rice, I decided on a simple version of Paneer grated and paneer cubes. The rice is paired with stuffed chilies. This makes as a wonderful lunch box recipe.
    The rice is not spicy and won't work out if you are serving it as such. Either you got to pair it with these stuffed chilies or a spicy gravy.

    This is a recipe I had noted from Viji of Vcuisine. Her blog is no longer public, so glad that I could note it when I was accessing it.

    Stuffed Green Chili

    6-7 big green chilis

    For filling
    Boiled potato - 2 big
    Onion chopped - 1 medium
    Garam masala powder - 1 tsp
    1 tbsp chopped corainder leaves
    Salt to taste

    To powder coarsely in the mixie

    Fried channa/dalia - 2 tbsp
    Fried groundnuts - 2 tbsp
    4-5 cashews

    Slit the chilis and soak them in boiling water for 30 minutes. Don’t remove the calyx. After 30 minutes remove the stem and seeds.

    Mix the filling ingredients together with the nuts powder. Adjust the salt and stuff this in chilis.

    When the puluv is ready, take a pan add 1 tbsp oil. Arrange the stuffed chilis neatly and cook on low fire. Turn it on all sidea. At the end sprinkle some besan powder and salt on top. Serve hot with paneer pulao.

    Notes:

    If possible prepare it one day ahead and leave it in the refrigerator.
    This is not a spicey pulao, but tastes wonderful.

    Paneer Puloa 

    Basmati Rice - 1 & 1/2 cups
    Coconut Milk - 1 cup
    Water - 1 cup
    Salt to taste
    Bay leaf - 2 small
    Cardamom - 1
    Clove - 2
    Butter - 1 tsp

    Wash and soak the rice for 15 mins. Then in a non stick pan, heat the butter, saute the spices and roast the drained rice. Then add coconut milk and water, simmer and cook till done.

    For the Pulao

    Capsicum - 1 medium
    Spring Onions - 3 -4
    Green Chilies - 2 -3 medium
    Fistful of mint leaves
    Grated ginger - 1 tsp
    Garam masala powder - 1 tsp

    Grated paneer - 3/4 cup
    Cubed paneer - 1/2 cup

    In a non stick pan, heat the oil and saute the spring onions, then add the capsicum and cook well. Add the grated paneer and cook well for couple mins.

    Now add the cooked rice and spices and adjust for spice.

    I served it with stuffed green chilies
