    Chocolate Icebox Cake ~ Single Serve Dessert

    We just finished our April Mega BM themed on Baking, and it's time for the next edition! I have selected Kids Delight Creamy Food for the first week. The theme is Creamy Foods.

    It includes all puddings, custards, ice creams, and savory dishes like creamy soups, mac n cheese. I have been breaking my head to decide what to do. I have almost done most that I can make for my kids and it was a tough task.

    For day one, I selected to make Chocolate Icebox Cake, which included everything that's my kid's favorite. It has chocolate cookies, cream and set as an Icecream. The actual dish is made as a huge box with about 30 wafers. However as I was serving individual serving, I used three cookies and included grated chocolate and dark chocolate chips.

    I made the wafers from scratch and it was pretty easy assembling the whole dish.






    Chocolate Icebox Cake

    All purpose flour - 1 1/2 cups
    Cocoa powder - 3/4 cup
    Granulated Sugar  - 1 cup
    Salt a pinch
    Baking Soda a big pinch
    Cold butter - 1/4 cup
    Milk 1 tsp just to make it come together.
    How to make the Wafers
    In a mixing bowl, take the flour, cocoa, sugar, salt, and soda. Mix well and add the butter, knead till it crumbles. Then knead well. The dough almost comes together, just sprinkle milk over this and knead till it holds shape.
    Roll as a cylinder and cling wrap. Refrigerate for an hour.
    Remove and slice very thin. Preheat the oven at 200 C. Place the cookies on the greased tray with enough space.
    Bake at 185 C for 10 mins. Remove and allow to cool.
    Notes:
    After cooling for 10 - 15 mins, check if the cookies are crispy, else bake again for 2 mins.
    For the whipped cream
    Fresh cream - 1 cup
    Icing Sugar - 3 -4 tbsp (or increase as per taste)
    Other toppings
    Shaved Chocolates / Grated Chocolate
    Dark Chocolate Chips
    To Assemble the Chocolate Icebox Cake:
    I took three cookies for each single serve
    In the serving bowl, place the first cookie, spread the cream over it, sprinkle grated chocolate, place the second cookie, and repeat. On the third cookie, spread the cream, and top with dark chocolate chips.
    Freeze till it sets.
    When serving, cut through as 4 parts and serve right away

      ice cream cakes were always my fave as a child. There is an ice cream parlor chain here called Carvel and every birthday I always got a cake from there. You are reminding me of my childhood with this post.

      Totally sinful valli!!i have bookmarked one such recipe a very long time. But thought of making it with store-bought wafers!! you have done a great job of making from scratch!! Totally delicious!!! 🙂
