    Green Chutney, Imli Chutney, Chilli Garlic Chutney ~ Chutneys for Chats

    When I made Bun Samosa, I saw that I had to make the chat chutneys all over again. Because these were differently made from what I normally make. I know it must just be just an ingredient or two different. Yet it was different. I adapted the Bun Samosa from Vaishali and these chutneys are also from her.
    It just goes to show how many different variations we can have for these simple chutneys that preps up those tangy, tantalizing Chats. I wanted to have a separate post to record them as otherwise they just get lost!
    Being a Sunday, I had plans for making new things, hopefully, they should work out as expected. You can use this hara Chutney in different chats like this Dahi Chutney wale Gol Gappe

    Green Chutney

    Ingredients Needed

    Coriander leaves - 1 cup
    Green chilies - 4
    Onions - 1 medium
    Garlic - 4 cloves
    A small piece of ginger
    Lemon juice - 2 tbsp
    Salt to taste

    Grind into a fine paste.

    Sweet chutney

    Tamarind / Imli - 1/2 cup soaked
    Jaggery - 2 tbsp
    Red Chili powder - 2 tsp
    Jeera powder - 1 tsp
    Hing a pinch
    Salt to taste

    How to make the Chutney

    Wash the tamarind well and MW for 5 mins. Once done, add grated jaggery and MW again for 2 mins.

    Allow it to cool, squeeze well, and strain. Add the spice powders and bring to boil on stovetop till you get a thick chutney.

    Cool and serve with chats

    Chilli Garlic Chutney

    Whole dry red chilies - 10
    Garlic - 10 - 12 cloves
    Oil - 2 tsp

    Add all the ingredients and make a paste using very little water.

      Valli, my mom used to make these 3 chutneys whenever we had a loong weekend and then invite suggestions about whether we want ragda patties, sev puri or bhel , she made large quantities and make one each dishes daily till we finished off the chutney's , ofcourse this happened probably once in 8-10 months, but it was so satisfying , you reminded me of those lovely days :), breaking puris with sisters and chatting endlessly with chats
