Johnny Cakes are quick bread from Belize, a country in Central America. These are breakfast bread roll and called Journey Cake, which was renamed to Johnny Cake. Johnny cake is to Belize what croissant is in France, a typical part of the traditional breakfast. It is supposed to be prepared and served hot every morning. These are served warm with either sweet or savory side dish and has a nutty coconut taste because of the coconut milk used.
In fact, the coconut milk I used was just enough to make the balls. These buns were traditionally prepared by wives of sailors before their departure so that they could have satisfying food that would store well during their travels. I simply went ahead with this recipe and didn’t look for a different source. Later when I checked it out, the final bread seem to be baked in different shapes. Mine were very buttery and not a soft bread. Quick bread does tend to be like that.
I enjoyed mine slathered with mango jam. I normally check to ensure I don’t repeat the props or similar composition, in consecutive days while doing Mega Marathon. However, without realizing, I seem to have repeated the jam bottles, it so happened that both days used the same set of jams.
Anyway, these quick bread make a good snack as well. I don’t think I had another choice for this letter and quite enjoyed making this.

Step By Step Pictures for making Johnny Cake
Johnny Cake from Belize
2 cups All Purpose Flour
1 tsp Baking Powder
1/2 tsp Salt
4 tbsp Butter
1/2 cup Coconut Milk or coconut cream
In a wide bowl, mix flour, baking powder, and salt. Add the butter, and mix with your fingertips till you get a crumbly texture.
Next, add the coconut milk and knead quickly until forming a smooth ball
Now divide the dough into golf sized balls. Place the balls on a baking sheet lined with parchment paper and let stand for 10 minutes.
Then slightly flatten the balls. Prick in several places with a fork.
Preheat oven to 200C. Bake for 10 to 15 minutes. Times vary greatly from one oven to another, so pay close attention to the color of the Johnny cakes.
Allow to cool down for 10 minutes, enjoy Johnny cakes hot or warm, open and filled with sweet or savory ingredients.
I served mine with jams and it was so yum!
