Cheese Crackers with Parmesan from Italy is my next on the Bakes from the world. I love crackers and if it comes loaded with cheese, they top the list.

This dish was the first one to get done. In fact, this was for another theme, I had to skip that theme and it was lying around in the draft. This prompted me to double-check on the country clause and the only thing I have done is the name play by not using the parmesan at the beginning.

These are much like the Cheezit or similar ones we get here. Only I read these were originally made from Italy and the commercial brand makes it similar.

When I was making these crackers, my boys were playing nearby and wanted to taste them right away. I had to cajole Chinnu a bit before he tasted this. After that, I literally had to request them to leave a batch for me to click the pictures. Since this one was ready, I never bothered to check out for other Cs.

Take the flour in a bowl, add the seasonings, butter, cream, and cheese, and crumble well.
Knead to a stiff dough, if required sprinkle a few drops of milk.
Let it rest for 5 mins.
Then dust your board, divide the dough into balls, flatten each and roll out to 1/8th thick. Prick with a fork all over.
Using a pizza cutter or a shaped one, cut the dough into 1" squares.
On a greased and lined baking tray, transfer the squares
Sprinkle the crackers with a tiny bit of coarse salt, additional grated cheese.
Bake the crackers for about 15 minutes, until they’re a medium golden brown. Remove them from the oven, and cool right on the pan.

    Notes

If you are looking at perfect squares for all the crackers, you can discard the ones on the sides, knead it again and repeat the process.
Be cautious on the salt you sprinkle and add very little. We do not want a salty one to munch on. Remember Parmesan Cheese is salty as such.

I love salty crackers and this one with parmesan cheese is a wonderful choice. It is so helpful to have a draft folder with some recipes as they come in handy during tight times.
