    Lahsun ki Chutney or Garlic Chutney for chats is a must to have condiment while you make different chat dishes. Many of the Mumbai chats feature this lasun ki chutney as a must.

    Lahsun ki Chutney

    Garlic chutney, also referred to as lahsun chutney, lahsun ki chutney, lessun chutney, lehsun chutney and bellulli chutney, is a chutney, served along with Chat dishes. As with any recipe, there are so many variations. However, all versions are made with fresh garlic and green or dried red chilies. Some add dry or fresh coconut or groundnuts to the chutney.

    This is a Garlic chutney is a part of the Dabeli. It's really garlicky and spicy. My family enjoyed this spicy chutney with the chats I made for the Mumbai Street Food. This is right on the spice level.

    While making the different chats, if you are bored of regular masala you can try this Tandoori Masala that Konda loves. This is yet another garlic chutney we make for Dosa.

    Ingredients

    To make this Lahsun ki Chutney, get your ingredients ready and make the chutney with as little as possible.

    Garlic / Lahsun - We use the big garlic variety for ease of peeling and chopping. Soak in water for easy removal.

    Cumin Seeds - Cumin adds a wonderful flavour to the chutney and you shouldn't skip it.

    Dried Red Chillies - We use dried red chili to make this spicy chutney, you can always add some green chilies as well.

    Lemon Juice - To balance the chutney, add some lemon juice. The tangy taste makes it balances the garlicky taste.

    Instructions

    We begin to make Lahsun ki Chutney by soaking the garlic in water to peel it easily.
    Then dry roast the dry chilies along with cumin seeds.
    Once it cools down, grind everything to a smooth paste.
    Add as little water as possible. Store in an air-tight container.

    Storage of the Lahsun ki Chutney

    This can easily stay good for couple of days when refrigerated because garlic is fresh. This can be used as spread over dosas as well, so always remove as you want to use.

    Always soak in water to peel garlic skin. Use as little water as possible for the longer shelf life.

    Ingredients

    • 1/2 cup Garlic / Lahsun peeled and chopped
    • 1 teaspoon Cumin Seeds
    • 5 to 6 Dried Red Chillies
    • 1/2 teaspoon Lemon Juice
    • Salt to taste

    Instructions

    • Heat a pan and dry roast the red chilies until crispy along with cumin seeds.
    • Allow it to cool down, then take it along with chopped garlic and pulse it to a fine paste.
    • Add as little water as possible. Store in an air tight container

    Notes

    This can easily stay good for couple of days when refrigerated because garlic is fresh. This can be used as spread over dosas as well.

      It is always stocked in the frig..and trust me that bowl,...it tells me to go and eat something made with it..may be will add to the curd..oh...my mouth's watering Valli:))

      I don't eat garlic and so cannot comment about the flavor and similar things.:)

      Such a delicious chutney for dabeli and sometimes I make it dry too.Definitely a must have condiment and it's versatile too. Can be used with dosa, idli too 🙂
