do a simple one. Especially with just Cookies stuffed with filling etc. So that lead to a long search and planning on what can be made into a
sandwich that would fit the theme. Of course it didn't take long to
decide on what I wanted to do.

stuffing would be a cake as that would be interesting. Since cookies can't be made in microwave, decided to make the cake in microwave. Though this recipe must have taken just about 30 mins, I wasn't able to make it on time. So here it comes finally!
MW Sponge Cake in 3 mins
Chocolate Coffee Cookies Sandwich with MW Spongy Cake
For the Chocolate Coffee Cookies
Cooking Chocolate - 50 gms / 4 big squares
Brown Sugar - 1/4 cup
Flour - 3/4 cup
Instant Coffee powder - 3/4 tsp
Baking powder - 1/2 tsp
Butter - 2 tbsp
Milk - 1 tsp
How to make the cookies
In a mw bowl, melt the chocolates, add butter and whisk well.
Then add the brown sugar, flour, mix well. Finally add the baking powder.
Combine everything well. If the dough is not binding, add a tsp of milk and knead well
Roll down and cut out into shapes.
Pre heat the oven at 185* C and then place the cookies in a greased tray and bake for 12 mins.
Allow to cool and remove
3 Mins MW Sponge Cake with Chocolate Chips
Ingredients Needed:
Flour - 3/4 cup
Icing Sugar - 1/4 cup
Brown Sugar - 1/4 cup
Baking powder - 1/2 tsp
Cooking Oil - 3 tbsp
Water - 2 tbsp
Vanilla essence few drops
Vinegar - 2 tsp
Chocolate Chips handful
In a bowl, take the flour, mix all the ingredients and gently mix in together.
In a mw bowl, transfer and mw for 3 mins.
How to assemble the Sandwich
I used a heart shaped mw cups and some raised above the regular, so I had to cut through the middle.
Take two chocolate cookies, spread the nutella on both sides of the sponge cake, sandwich between two cookies.
Makes a great dessert for parties.
