For the second week of Blogging Marathon, I decided to do the Healthy Lunch Box Recipes for Kids. Having decided that she would host a lunch box theme, it was obvious I would be excited and prepared the recipes to be made up ahead of time. However, as always posting this has taken time.
With BM's Silver Jubilee celebrations coming in middle, it was almost impossible for me to do this on time. Not that should have been an excuse, but there you have it! After a weekend that was too fabulous to write in mere words, I promise to share all the excitement in the last week of this Edition. Meanwhile, sit back and enjoy these simple and delicious rice varieties that I had made for Konda's Lunch box.
Though there is a wide range of dishes that can fall under this category, making rice becomes the easiest, not to mention the time that's saved, the uncluttered appearance on the whole. So you will be reading about different Rice varieties in the next few days.
Gajar Matar Pulao
Ingredients Needed:
Rice - 1 & 1/2 cups
Water - 3 cups
Ghee / Oil - 2 tbsp
Cumin seeds - 1 tsp
Ginger, grated - 1/2 tsp
Onions - 1 medium
Carrots, chopped and Shelled peas 1 cup
Roasted Coriander powder 2 tsp
Green Chillies 2 long
Garam masala - 1 tsp
Salt to taste
Turmeric a pinch
How to make Gajar Matar Pulao:
Wash and soak rice for at least 15 mins.
In a pressure cooker, heat oil/ghee, add the cumin seeds, onion julienned, and green chilies. Saute for a while, then add grated ginger.
When the onions and ginger browns a little, add the peas, carrots, coriander powder, garam masala, salt and turmeric. Stir-fry well. Leave uncovered. Cook till the vegetables are well coated with the spices.
Drain the rice and add to the pan, combine everything well. Then add water and bring to boil. Cover with the lid and pressure cook for 3 whistles.
The rice should be done in about ten minutes. Serve hot.
Notes:
This recipe also calls for adding 2 tbsp of coarsely powdered urad daal badis, which I didn't have. I am sure the taste of this would be very much different if this was added. However, since this was getting packed for Kids, I preferred not adding it.
This can be done on the pan directly and will be completed in 15 mins time as such. However, if you are in a hurry pressure cooker always comes to help.
