How to bake the perfect Garlic Bread

Next in the series of How to make the Perfect Series, this garlic bread caught my fancy. While my own garlic bread or the Domino's Garlic bread, comes out perfect, I was still intrigued to attempt Felicity Cloake's attempt at making a perfect Garlic Bread. She used the Ciabatta Bread from here as her base bread and tried couple of other theories before finalizing on a perfect formula.
However when I had checked the ciabatta bread, it required an initial bread starter which takes nearly 24 hour time and that would mean further delay in my attempt at making this. So I had to discard the bread recipe and sort of adapted my own bread recipe and followed the stuffing part from this series.
Nothing beats making your own bread and then garlic bread and the aroma that hits you when it is getting baked is so heavenly that you would be transported to a different world all together!
I was able to make only one loaf and it wasn't just enough for all of us. Konda and Peddu loved it and the best compliment was the fact that Hubby dear thought it was from a store. Couple of days later when I was saying that the kids wanted me to bake another bread, he showed surprised and asked if I had made the bread myself. He wouldn't know as most times he hardly ever gets a share. But I was still quite happy with his verdict.
So this is yet another delicious retake and surely something that I would again make soon.

    For the Bread Loaf

    Ingredients Needed:

All purpose flour - 2 cups
Active dry yeast - 1 tsp
    Butter - 2 tsp
    Olive Oil - 1 tbsp
    Sugar - 1 tsp
    Milk - 1 cup
    Salt - 1/2 tsp
    Water to knead

    How to make the bread
Proof the yeast by adding warm water, sugar. Keep it covered for 10 mins. Once the yeast becomes active, make the bread.
In a wide bowl, take the flour, butter, salt, and yeast. Mix well. Knead till you get a soft pliable dough. Cover with a wet muslin cloth and let it rise.
After 1 & 1/2 hrs - 2 hrs, once the dough has risen double it's size, punch it down again and knead well. You can add olive oil here and knead to a soft dough.
Shape it as a loaf, add to the greased loaf pan and let it aside to rise.
After the dough rises again, pre heat the oven to 200 C and bake for 20 - 25 mins.
Let it cool down, while you get the garlic filling ready.

    For Stuffing Garlic in Bread

Butter - 2 tbsp at room temperature
    Garlic, big - 5 -6 cloves
    Dry herbs - as required
    Mozzarella Cheese - 2 tbsp
Red Chili flakes - 2 tbsp
    Salt to taste
    Cheese for topping

How to make the Garlic filling

Grate the cheese and mix with soft butter, red chili flakes, salt and herbs.

    How to make Garlic Bread

Once the bread is baked well. Slice through the bread making sure not to go right through the bread.

Stuff the filling in between each slice, then wrap a foil large enough to cover the entire loaf.

Sprinkle the top of the loaf with the remaining cheese, and seal the foil around the loaf.

Bake for about 10 - 15 minutes, then open the foil and bake for another five minutes

    Serve hot

A few weeks back I tried to use her recipe too and when I found the bread needed a starter used a different bread recipe. You got lovely crumb texture on the bread. The end result looks great.
