Konda loves Sweet Corn Butter Chat so for want of a better inspiration I thought I will simply make it into rice by tweaking the recipe a bit to suit for rice preparation. I followed the same method for making the chat, except the kernels didn't have the ready made chat masala and I ended up making my own chat masala, which Konda said was good. She ate some for her breakfast and packed for snack period, plus she took the rice for lunch. I can say it's an overdose of sweet corn for her today, but she simply loves it, so no worries.

I had some for tasting and I must say it tasted a wee bit spicy, but then Konda eats spicy food these days. I was really racking my mind for an idea for the last two days and this came to mind in the last moment. It's almost like a fried rice as you end up frying everything.

    Sweet Corn Chat Rice

    Ingredients Needed:

    For the Rice
    1 cup Cooked Rice
    1 cup Sweet Corn Kernels
    1/4 medium Onion julienne
    1/4 tsp Ginger Garlic Paste
    1 tsp Cooking Oil
    A Pinch Garam Masala

    For the Masala
    1 tsp Butter
    1/2 tsp Chat Masala
    1/2 tsp Red Chilli Powder
    Salt to taste
    A Pinch Kala Namak
    1/4 tsp Amchur Powder

How to make the Sweet Corn Chat Rice:

    Cooking the Sweet Corn
Wash and microwave the sweet corn kernels with enough water for 10 mins.
Drain the kernels and add butter and all the masalas. Mix well and micro again for a minute.

    For making the rice:
Heat a nonstick pan with oil, add onions, saute till it’s almost brown. Add ginger garlic paste, cook for a couple of mins.
Then add the cooked corn kernels, mix well.
    Adjust the masala if required.
Add cooked rice, mix well. Finally, sprinkle a small pinch of garam masala and coriander leaves.

Ooooo! This is a fun take on the sweet corn chat served in cups at most cinema halls and malls. Making this at home with rice seems to be a winner!
