    This day might as well go down the history as one of those unforgettable days. At about 2.30 pm this afternoon, I felt the chair shake. It was very clearly a tremor and the second time it happened we were prepared. Within seconds, we saw the entire building being evacuated and everybody were on the roads.
    It happened only twice for just about a couple of seconds, yet people were really scared. Many were reluctant to get back to the building. Everybody was requested to leave for home and the journey back was one long ride. The roads were jam packed. I finally reached home and was happy that the kids were back home.
    Coming to the recipe, these cookies were something I made yesterday. I was out of all purpose flour and I had to bake something. I wanted to send something for my friend's kid and was short of ideas. I wanted to make Sunnundalu, then thought kids would love cookies. So I decided that I should make the cookies with whole wheat flour. I remembered Harini baking something similar and checked up to see if it is suitable. I loved the fact that it called for almond flour and apple sauce. I was ready to tweak with more healthy ingredients.

    When hubby dear saw and tasted, he said it was very good, but hardly suitable for kids as they would want buttery cookies. I said I had to make the best of the situation and hoped the kid would like it. I was happy when I called up and was told that the cookies disappeared. Back home, I was hoping I would get a bite, only to know that everything disappeared too.
    These are not your regular crispy or hard cookies, rather soft and chewy but nevertheless very nice.
    Vegan Whole Wheat Cookies with Almond flour and Apple Sauce

    Step by Step Picture Recipe

    Vegan Whole Wheat Cookies


    Ingredients Needed

    Wheat flour  1 & 1/2 cup
    Almond flour - 3/4 cup
    Brown sugar - 1/2 cup
    White sugar - 1/4 cup
    Vanilla essence few drops
    Olive oil - 3 tsp
    Apple puree - 3/4 cup (1 big apple)
    Baking Powder - 1 tsp
    Salt a pinch
    Dry Coconut powder - 2 tsp

    How to make Vegan Wheat Flour Cookies
    Chop the almonds into small pieces and pulse to get soft almond flour.
    Chop the apples, peel the outer skin, and microwave for 1 min. Mash well using a fork to get the puree. Keep it aside.
    In a blow, take the wheat flour, almond flour, baking powder, and salt. Mix well.
    In another bowl, take the brown sugar, white sugar, olive oil, apple purée and beat well so that the brown sugar melts. Then slowly add this sugar mix to the flour and mix well. The dough tends to be sticky, so add a little bit of wheat flour based on consistency.

    Once you get a dough that looks fine and not too sticky, freeze for 10 - 15 mins.

    Pre heat the oven at 185 Deg C.

    Then pinch out a small ball of the dough and bake it for 185 Deg C for 15 mins.

    Gently remove once it cools down.
