    Vegan Brownies with Flax Seeds ~ Egg Substitutes in Baking

    For the final day of the fourth day, where I have been doing Egg Substitutes, I have a fudgy, chewy Brownie made with Flax Seeds powder. After knowing that the Banana and chocolate chip Squares were liked by all at home, I still wanted to make something chocolaty as it's easy to get the kids eat it.
     
    Also I came across this simple vegan style brownie that I thought should be easy to put together. So here you the most simplest version of a brownie. I warn you ahead, this is very fudgy and not easily get sliced as cake or a typical brownie.
     
    Flax Seeds powder acts as a wonderful egg substitutes as when you mix a tbsp of the powder with 3 tbsp of water, whisk and let it sit on the counter, it becomes mushy and sticky, almost emulating an egg like texture. Though one should also be aware that it does leave an aftereffect taste in the cake. So this is best suited for muffins that have nuts in it. Or if you don't bother much, you can use in your regular cakes as well.
    Since this is a vegan brownie, the oil, though I have used olive oil, makes the brownie more dense and chocolaty. My kids love this texture so I have no issues making brownies of this sort. I was thinking I should top it with some nuts. Hubby dear, who helped with clicking as I was mixing, suggested I add nuts to half for him to enjoy and rest for the kids to enjoy as they like. So I added walnuts to half and dark chocolate chips to other half.
     
    I only baked it for 30 mins and it was left in the oven to cool down. When I tried slicing it to squares, the top was getting cracked and the bottom was still fudgy, though cooked. I baked it turned for 5 mins extra after slicing it.
     
    I had used only a cup of flour and baked in 8" square pan and this is just enough for a day or so. This rather gives me more scope to try different proportions.
     
    I hope you enjoyed this series and will pray that I will cook up some useful posts for the next four days, as I have nothing ready..:)

    Chewy Vegan Brownies with Flax Seeds Substitute
     
    All purpose flour - 1 cup
    Granulated Sugar - 1 cup (powdered before using)
    Olive oil - 1/4 cup
    Water - 1/3 cup
    Cocoa powder - 1/3 cup
    Ground Flax seed - 1 tbsp mixed in 3 tbsp water
    Baking powder - 1/2 tsp
    Salt a pinch
     
    How to make Vegan Brownie
     
    In a mixing bowl, add sugar, water, and oil.
     
    Mix until blended, then add in the dry ingredients and mix well.
     
    Pour into a greased and lined 8" square pan and bake at 185 C for 25 to 30 minutes.
     

    Notes

    After slicing I baked it again for 5 mins at 185C

      I've never used flax seed meal in brownies. I've tried the egg replacer and know that it works well. Thanks for this recipe -- will try it for my kids.

      The brownie must be yum. Flax meal is my to go egg substitute for most of my bakes and I usually don't feel the after taste.
