Caramelized Potatoes, a typical Danish Christmas classic, is a wonderful twist to the regular potato wedges made by cooking potato wedges in caramelized sugar and butter sauce. The salty sweet wedges with the caramel taste so heavenly.
This week, its all about Scandinavian Cuisines, where the focus is on Denmark, Norway and Sweden. I have picked up one for each day and though the recipes I chose are so simple I couldn't get myself to make them for various reasons.
Finally, I had some time and went about with this Caramelized Potatoes and it was so good. Since I was making with just 1 big potato, it hardly took time to get done. I microwaved the potato for 4 mins. Then chopped into wedges and toasted it in the caramel sauce. It was sticky, silky and delicious.
Because it is relatively so easy to get done, you could easily make this when the hunger strikes!

Caramelized Potatoes ~ How to make Karamelliseret Kartofler
1 big Potato
3 tsp Sugar
1 tsp Butter
A Pinch Salt
Microwave the Potato for 4 mins. Soak in water and peel off the outer skin.
Cut into thick 1/2 inch wedges
Heat a nonstick pan with sugar, let it melt in sim flame.
Stir to make the melted sugar cook further to become liquid.
Ensure you have the rest of the items on hand as you make this caramel.
Add the butter and combine well.
Add the parboiled potato wedges to the caramel sauce, and coat the sauce over the potatoes.
Let it cook for 2 mins on low flame. Sprinkle a pinch salt over this and serve hot.
