    Carrot Salad | Carrot and Dates Salad with Peanut

    We are starting the second week of Blogging Marathon #23, with the theme cooking with carrots. As such carrots are widely used as part of the ingredients in many dishes. Other than the Gajar Ka Halwa, I really couldn't think of any dish that stars carrot as the single main ingredient. So I had to search through my filed recipes and hopefully I have come up with something interesting.
    For the first day, it's a simple salad with carrots and dates. Though this ended up being sweet in taste, I enjoyed it. Amma refused to taste it saying it's sweet and Hubby dear naturally couldn't eat beyond his small serving. This is not for those who prefer spicy salad. In fact this tasted more like a dessert than a salad. But then when some can start their day with sweet breakfast, why not start their meal with this delicious Carrot salad. 

    The surprising element in this salad is the crunchy crushed roasted peanuts adds to the salad. The honey adds to the carrot sweetness and pepper gives a kick. On the whole this salad surely makes a great filling if you decide you really want to skip a meal.

    Carrot and Date Salad

    Ingredients Needed

    Carrot, grated - 1 cup
    Dates - 5 -7 nos
    Honey - 2 tsp
    Pepper for taste
    Roasted Peanuts - handful

    How to make the Salad

    Wash and grate the carrots. In a bowl, take the carrots, finely chopped dates, mix in the honey and sprinkle the pepper. Toss well and chill until serving.

    Just before serving, add in the crushed peanut and mix well.

      I think it 's a wonderful salad. I make this quite often. , but I add green chilly to give that kick. The flavor of honey n the crunch of peanuts ....it is simply too good , one of my fav salads, n well if some people dont like it its ok one can't like everything isn't it ?

      i often add raisins to my carrots (salad if i can call grated carrot that), this is a good combination and the salad looks befitting for the winter

      I too made a 'sweet' salad once with carrots and orange that was dubbed dessert by everyone, but who cares what it is as long as it is consumed and loved by all! Nice one with dates and peanuts

      I've never eaten carrot as a sweet salad...I'm more of a spicy salad eater. They look very good though!

      We prepare kosumbari often but never paired carrots with dates. Interesting one.

      I used to make paneer, carrot and raisin salad. This also sounds nice. I like kosumbari also, soft moong dal paired with crunchy carrots..yumm!

      this one is one of my favorite salad I used to make thi with raisins.. very healthy one.. and you know I like this as a stuffing for sandwich yummm...
