    Eggless Chocolate Mug Cake ~ Microwave Mug Cake

    Birthdays are always memorable. I vividly remember celebrating mine with Caramel Toffees most of my life, then it got upgraded to Carbury Nuts, those small caramel coated chocolate nuts. Those days it was never about cutting cakes at home. It was mostly spending time with school friends. The whole day you are treated so special and the fun never ends.
    The time I remember cutting cakes and spending much time with friends or the whole family gathering to celebrate, started when I completed my tenth standard. And we also started a tradition of cutting cakes for all the family members. Likewise, we are not so into gifting each other. Wishes and kisses were more than enough. With kids coming in, their expectations of gifts came in. They somehow have always gifted me with their sketches, paintings, which is far dearer to me than any other thing. They get busy from the previous day and try to act secret with their handiwork.
    This year it's been extra special as my brother came down with his family. We are meeting them after three years. Spending time with my parents and my brother on the day made it extra special. To top it, all my BM Buddies gave me the ultimate surprise. When I saw the email thread which had posts, wishing me along with their cooking was simply superb. And more than that was the video wishes from all of them across the globe.
    I knew it had to be Vaishali's idea and what a wonderful treat it has been. I am so honored and touched that all of them took the time to do this for me. Thank you once again. The dishes each of them picked were my favorite too, so it was so much fun reading what each had done. Finally, Padma walked in with a cake that Vaishali had requested her to give. Imagine I was floating in Chocolate Heaven since morning.
    I woke up early and went back to sleep. My kids were waiting for me to wake up at the usual time and planned their surprise around that time. Imagine their shock when they realized that I took that day of all, to sleep late!. When I woke up, they all prompted me towards the kitchen and the sight that greeted me was so sweet. Peddu had written a notice to be careful in handling the Microwave. I opened it up to see a Mug cake. They all jumped and wished me and were forcing me to eat the cake.
    For the first time in my life, I was eating something without my coffee. I knew their reasons right away because they wanted to eat after me. The cake was so delicious and so nicely done. I couldn't believe Konda had baked it herself without anybody helping her. I knew she was up to something when she was in deep discussion with my niece. Looks like Amma was aware that she was going to bake something.
    Konda said the recipe was new, as she wanted to bake a new one and not from my list. Later I realized that she added wheat flour, and the cake was still so good.
    So here's my vote of thanks for being such awesome friends. Thank you, Gayathri for the wonderful card with your beautiful cake. Thank you, Vaishali, Rajani, Sushma,  Pavani, Sapana, Kalyani, Nalini, Pradnya, Sandhya, Harini, Priya Suresh, Priya Srinivasan, Archana, Nisha, PJ, Usha, Suma, Srividhya, Sowmya, Jayanthi, Smruti, Veena, Kamalika, Nandini and I hope I haven't missed anybody, for all your wonderful wishes.

    Eggless Wheat Flour Chocolate Mug Cake ~ Microwave

    Ingredients Needed:

    Wheat Flour- 3 tbsp
    Coco powder - 1 1/2 tbsp
    Baking powder - 1/8 tsp
    Baking soda - a pinch
    Condensed milk - 3 tbsp
    Melted butter- 2 tbsp
    Milk - 4 tbsp
    Chocolate chunks - a fistful

    How to make the Mug Cake

    Stir together flour, cocoa powder, baking powder, and baking soda in a microwaveable mug.

    Add condensed milk, melted butter, and milk and mix well.

    Add chocolate chunks on top and microwave for a minute. Check and microwave if needed for another 30 secs.

    Serve warm.

      Kids are always excited to give surprise gifts to parents I their birthdays. Konda did a wonderful job making the microwave mug cake. It was a pleasure and fun cooking for your virtual party and good to know you enjoyed all the surprises and food that was cooked for you on your special day.
