    Orange Chocolate Chip Muffin

    For the final day of making Chocolate Cupcakes/Muffins, I thought one with fruits would be great. I had previously made quite some bakes with fresh Orange juice and those cakes and cookies turned out so good. This time when I had thought of the theme, I was wondering how we can combine fresh segments along with the juice and add chocolate to boot.The combination was quite heavenly and you must try to know and enjoy how delicious this was.

    The days are quite busy with us planning so much for the BM#39. With just short of two months away, there is not enough time for us to cook. As we say we need to have something that will keep us so busy and occupied that we hardly realize time flying away!

    Boys have their exams on right now and today they had an EVS project where they had to talk about how they will keep the earth clean. I was trying to refresh their memory. Peddu said he knows everything while Chinnu said he was not interested to know what I was going to say. Finally, I came to know that apart from sentences he told us, Peddu added some more and get his teachers' appreciation. I wonder how they always heed their teacher's word.

    Anyway, these orange muffins were mostly enjoyed by yours truly and Konda. Boys are yet to develop a finer sense of taste. So I have to wait for them to grow up..:)

    Orange Chocolate Chip Muffin

    Ingredients Needed:

    Flour - 1 cup
    Corn Flour - 1 tbsp
    Icing Sugar - 1/2 cup
    Baking Soda - 1/2 tsp
    Baking powder - 1 tsp
    Condensed Milk - 2 tbsp
    Orange Juice - 2 - 3 tbsp
    Orange Segments - 3 tbsp

    Curds / Yoghurt - 1/2 cup
    Extra Virgin Olive Oil - 2 tbsp
    Butter - 2 tsp
    Milk - 1 - 2 tbsp / as required
    Chocolate Chips - 2 tbsp
    Vanilla Essence - ½ tsp

    Muffin Liners - 6 nos

    How to make the muffins:

    Line the muffin molds with the liners and keep it aside.

    Sift the dry ingredients in a bowl.

    Melt the butter, beat the curds. Add the butter, olive oil, and curds to the dry ingredients.

    Add the fruits, orange juice along with segments and combine everything well. Add milk as required to make the batter lose.

    Using a spoon into the mold.

    Gently mix in well. Don't beat at this stage.

    Preheat the oven to 185 degrees C.

    Bake at 185 degrees C for 30 minutes. Don't check for doneness until the first 20 mins.

    Use a toothpick to see if the muffins are done. Insert the stick in the center and if it comes out clean, it's done.

    Once the full time is done, allow it to cool in the oven for 5 mins, then remove and cool outside for a while.

    Notes

    Since the batter tends to be on the looser side, this gets baked for 30 mins, you can check it after 20 mins. Or once your oven starts smelling heavenly!

      I can totally understand when you say kids listen more to what the teacher says!!

      And you are driving me crazy with all those chocolate muffins and those liners too. [Have been looking for some colorful liners but cant get any !]

      And I am sure you know my bookmarks are getting lengthier 🙂

      Kids that age tend to listen to everything the teacher says. Then they grow up. 🙂

      I agree with the orange juice part. The first muffins I learnt was made using it and they used to come out real good.
