August brings in a new BM Edition and we are at 67! The first week is going to be all about Kids Lunch Box dishes. A while ago I was asked to write about healthy Kids Lunchbox recipes for The Hindu. It took me a while to come out with the exact criteria meeting the healthy tag.
I am a person who believes in moderation and letting the kids indulge in what they like. Yes, I do believe in eating a slice of chocolate cake for breakfast, of course once in a while and not on regular basis. My kids have always been fussy eaters and I had many sleepless nights thinking about what I pack for them.
We have come a long way in the way things work out. When Konda was in her primary class, she used to carry only Dosa every day. I used to get bored packing just that. Then it was followed by only Curd Rice. Those were some of the worse food blogger scenarios if you know what I mean!
I have had many friends and colleagues telling me that my kids are so lucky that I cook so many varieties. The truth is not all three eat all the dishes I make and I guess it is universally accepted too. Most times I tag a dish kid friendly even when one of them approves it and asks for it again. I think even if a just handful of kids like it, it's worth making it.
So when this idea was given for me to expand on it, I was literally scratching down so many ideas. The dish had to meet so many ticks! I also planned that my dishes should have variety, so I had to make some roti, some rice dishes and something fancy all suitable to be packed and eaten some 5 hours later.
All the dishes I had made for this series were all approved by Konda, that stuffed roti by the boys as well.
Today's rice is a twist in the Fried Rice. Peddu loves Fried Rice, however, seeing all those greens he refused. So it was sent to only Konda who said it was good in spite of those greens being there!
Carrot Drumstick Fried Rice
Ingredients Needed:
Cooked Basmati Rice - 1 cup
Fresh Carrots, julienne - 1/2 cup
Fresh Drumstick leaves - 1/2 cup
Spring Onions - 3 to 4 stalks
Oil - 2 tsp
Ghee - 1 tsp
Salt to taste
Soya Sauce - 1/2 tsp
Chili Sauce - 1 tsp (adjust to taste)
Pepper powder as per taste
How to make the Fried Rice
Have cooked rice ready at hand.
Prep the leaves and have it ready.
Heat a nonstick pan with oil, saute the spring onions till done for a min.
Then add the carrot and cook on high. Now add the ghee and saute the drumstick leaves till they are nicely done.
Now add the cooked rice and combine everything well. Add all the seasonings, sauces. Adjust the taste.
Serve.
Notes:
If packing this to a box, allow cooling down before closing it.

I think the kids, whose mom can cook good food, become fussy eater.. as their mom can pamper them with variety....a nice variation to fried rice
