This Okra ki Sabzi or Bhindi Sabzi is an easy and simple side dish you can serve with rice or roti. You can make this dish in under 20 minutes as this is a simple side dish.
I happen to make this bhindi bhaji recipe on one fine Sunday when we were making biryani for the kids. I was wondering what to make for the vegetarians and decided I might as well make use of the opportunity and make an Okra ki Sabzi so that I can meet the A to Z Side Dishes for O.
Deciding on O is tough and fixing on Okra made life easy for me. The first time I made it, it was having a little more liquid than what was pictured today. Both the times I had served it with rice. However, this surely makes a great dish with roti as well.
We mostly don't make such almost dry dishes for rice. However, this dish surely made a difference. Similar to this dish, you can make these simple side dishes for different combinations like this Dali Thoy, Bombay Chutney, Lobia Masala Curry, Jalfrezi Paneer, or this Kadala Curry.

How to make Bhindi Sabzi
Wash and wipe the lady's finger dry.
Chop into thin circles and allow to dry, this makes sure it doesn't turn slimy
Heat a Kadai with oil, add cumin seeds and saute for few minutes.
Add the finely chopped onions, saute till it turns colour.
Add ginger-garlic paste and continue sauteeing, at this stage add the chopped okra.
Next add salt, turmeric and mix well.
Let it get cooked on low flame and do not cover the kadai.
Add red chili powder and mix well.
When the bhindi is well coated add the tomato puree and combine well.
Next, add the coriander powder and curry leaves and coriander leaves.
Simmer for 10 mins until bhindi is well mixed and cooked. This takes about 20 mins.
Serve with rice or roti.

Ingredients Needed for making Bhindi Sabzi
- 2 tsp Cooking Oil
- 1 tsp Cumin Seeds
- 1 cup Onions
- 1 tsp Ginger Garlic paste
- 3 cups Bhindi / Lady's Finger / Okra 500 gms approx
- Salt to taste
- A pinch Turmeric powder
- 1 tsp Red Chili Powder
- 1 tsp Coriander Powder
- 1/2 cup Tomato Puree
- 1/4 tsp Garam Masala
- Coriander leaves
- Curry Leaves for garnish

Amazing curry! We loved this with rice as well as chapathi. The flavor was superb!
