Microwave Makai ka Dhokla
Ingredients Needed
Maize flour / Makai ka Atta - 1 cup
Buttermilk - 1 cup
Sweet corn kernels - 1/4 cup
Ginger, green chili paste - 2 tsp
Sugar
Lemon juice few drops
Eno's fruit salt / Baking Soda - 1 tsp
Oil - 1 tsp
Salt to taste
For the garnish
Coriander, chopped - 2 tbsp
For the tempering
Mustard seeds - 1/2 tsp
Sesame seeds - 1 tsp
Hing a pinch
Oil - 1 tsp
How to make Makai Ka Dhokla
Boil the Sweet corn kernels with water in MW for 5 mins. Drain and keep it aside.
Take the flour, sweet corn, green chilies ginger paste, salt, and mix with buttermilk. Just before steaming, add in either baking soda or ENO. Transfer to a greased microwave bowl and MW for 1 and a half min in intervals of 30 secs.
Allow to rest for a couple of minutes, then temper with the tempering ingredients and garnish with coconut and chopped coriander
This healthy dhokla is not only a great option for Diabetics, it can be served for your kid's snack. Of course, my boys won't try, however, Konda loves such snacks.

Suma, Makai flour is corn meal or corn flour which is yellow in colour. And not the Corn flour (known as corn starch in US) that is white and use as a thickening agent.
