Easy Paneer Pulao is a great dish to make when you are planning to pack Lunch for your Kids. While I have been packing lunch for my kids ever since Konda started her school, off late it becomes little stressful with kids becoming very picky eaters. I like to work around a menu with preplanned dishes in mind.
I haven't been able to have a proper plan for cooking on time along with regular cooking, which means I haven't been on time to post for the BM weeks. I have just started my September cooking and that has me really hooked to it. While in all that, planning something new for the kids, slipped my mind. So anything with rice is an easy one to manage, especially if it has paneer, I am sure they will love it.
So here's one for my Kid's Delight event, guest hosted by Priya Srinivasan, themed on Kids Lunch Box Recipes. This weekend we were traveling and Konda stayed back with Amma. Amma managed her school lunch with this easy and quick Paneer dish. The next two days are going to be similar ones, all clicked with my phone. So excuse the pictures if they are different!
We are starting our BM#79, week 2. I skipped doing it for week 1 as I completely forgot that I will be traveling and nothing was ready. Managed to do these for this week.
Easy Paneer Pulao
Ingredients Needed
1 cup Basmati Rice
1/2 cup Onions
1/2 cup Tomato
3 nos Green Chilies
1 tsp Ginger Garlic paste
2 Cloves
1 inch Cinnamon
1 Cardamom
1 Bay Leaf
Salt to taste
1 cup Paneer cubes
1/2 tsp Garam Masala
2 tsp Cooking Oil
1/2 tsp Butter
Wash and soak the rice for 15 mins.
In a Pressure Cooker, saute the whole spices in butter and oil. Then add Onion juliennes, till slightly browned.
Add slit green chilies, ginger garlic paste and saute well.
Add the tomatoes, salt and let the tomatoes get cooked. Takes about a couple of mins.
Now add the drained rice, garam masala and paneer cubes.
Add 2 cups water and adjust the spices.
Cover with lid and cook for 3 whistles.
Once the pressure falls, fluff and pack.

Awesome lunch-box combo. I have never tried this together in pressure cooker. Always make the rice and paneer mix separate. Need to try this.
