This is yet another instant green chili pickle popular in Rajasthan. Bikaneri Papad Ka Paratha Platter, the idea was to make some instant pickles to pair with the stuffed parathas.
Hari Mirchi ke Tipore Recipe is very instant and you hardly need much time to make it if you have the green chillies on hand.

Ingredients
Mirchi ke Tipore or Instant Hari Mirchi ke Tipore is a quick Green Chili Pickle popular in Rajasthan. The chopped chilies are cooked in a spice mix and served with parathas.
Green Chillies - We use the thick green chilies along with the seeds. These chilies are not very spicy.
Cooking Oil - In North, they use mustard oil for making pickles. I used regular refined oil though.
Spices - Mustard Seeds, Cumin Seeds and Fennel Seeds are used as whole. So make sure the oil is hot before adding these spices for the flavours to get released.
Spice powders - Regular pantry ingredients like Turmeric Powder, Coriander Powder, Hing and Amchur is used. The coriander powder gives extra body to the pickle.
Instructions
As this is an instant pickle, we use simple spices to make it. The powders give body to the pickle apart from making it very delicious.
Wash the chilies thoroughly. Pat dry, remove the stalk.
Chop the chilies in 1/2 inch chunks.
Heat a pan with oil, add mustard seeds and cumin seeds. Let them splutter.
Next add fennel seeds, saute for few seconds.
Then add the hing, turmeric powder and chopped green chilies, mango powder, coriander powder and salt and sauté for few minutes.
Let the chilies simmer for 1 to 2 minutes until they absorb all the spices.
Cover and cook the chilies for 2 minutes on low flame until they get tender.
Remove the lid after 2 mins, cook on high flame until the moisture dries up completely.
Serve with parathas.
Substitutions & Variations
This is an instant pickle and you can hardly have anything you can replace or change. We use very minimal ingredients and the whole cooking takes about 5 to 7 minutes on the whole.
You can skip the whole spices like cumin and fennel and add as powders as well.

We need a pan to cook the chilies. If you make extra to store for the next day, maybe an airtight container will help.
Storage
This Instant Hari Mirchi ke Tipore stays good for a week when refrigerated in an airtight container.

Ingredients
- 1 cup Green Chilies approx. 100 gms
- 2 tablespoon Cooking Oil
- 1/2 teaspoon Mustard Seeds
- 1/2 teaspoon Cumin Seeds
- 1 teaspoon Fennel Seeds
- 1/2 teaspoon Turmeric Powder
- 1 teaspoon Coriander Powder
- 1/4 teaspoon Asafoetida / Hing
- 1/2 teaspoon Amchur / Mango powder
- Salt to taste

One of my most favorite chili pickle is this mirchi ke tipore. I made it first when I was exploring the UP cuisine and totally in love with it. It is more of a curry for me than pickle. And I love your whole platter. So fulfilling.
