    Potato Pizzette Bites with Quick Tomato Sauce

    For the final day under Pizzas, Pastas n Noodles, I have this quick Potato Pizzette Bites made with a quick tomato sauce. I was looking at a quick dish as I had this left out from my weekend schedule and I was sure I will be able to manage only this after a workday.
    This turned out so lip smacking that I know I will be making it again very soon. You need to ensure you select a big potato to make for the base. As I knew Konda loved this and wanted more. I said it was restricted to snacks, meaning a few pieces each. However since I made this with a quick tomato sauce, it's surely something you can make it quickly.

    Potato Pizzette Bites with Quick Tomato Sauce
    Ingredients Needed:
    Potato - 1 big
    Mozzarella cheese - 1/2 cup
    Salt to taste
    Olive oil for drizzling.
    For the Quick Tomato Sauce
    Tomato - 1 big
    Shallots - 3 pieces
    Garlic - 1 tbsp
    Olive oil - 1 tsp
    Tomato Sauce - 2 tsp
    Italian Seasoning
    Chili flakes
    Salt to taste
    How to make the Potato Pizzette Bites
    Wash, peel, and slice the potato to thin slices. Sprinkle olive and bake at 185 C for 10 mins on one side. Turn over and again bake for 10 mins.
    Meanwhile, heat a nonstick pan, add oil, add finely chopped shallots, garlic, saute well.
    Then add the tomato puree, cook on high. Add salt and chili flakes.
    Now add the tomato sauce, adjust seasoning. And add water, cook on high, till it thickens.
    Once the potatoes are cooked, remove, sprinkle salt on both sides. On the top place a spoon of sauce, grated cheese and again bake for 2 mins at 185 C
    Serve hot.
