    About this recipe and some memories!

    Pizzas, Pastas and Noodles are my Kids' favorite food. I already have a huge collection of pasta recipes. Still I wanted to try something new as my regular base would just be flour, milk and butter.

    Today's recipe is a new recipe as I use a Mayonnaise Sauce with corn flour that gives even more of a creamy texture to the sauce. This was dished out for the Kid's Delight themed on Pizzas, Pasta and Noodles. This was an event I created to curate Kid friendly dishes.

    Each of my kids have different taste. However, they all love pizzas, pastas and noodles. Still though Chinnu loves pasta with white sauce, he always prefers onion cream pasta. Hence he was quite reluctant to taste this. It was a different story how it turned out once he tasted this dish. He kept asking for it again and again. This became another favorite dish for them.

    Ingredients Needed to make the Cheese Pasta

    For the Mayo Cream Sauce:

    Flour - I have used regular All purpose flour along with Corn flour to get the creamy texture.
    Fat - Use butter for enhanced taste.
    Liquid - Full cream milk will work very well for making this cream. However, you can use skimmed milk as well.
    Seasoning - Add salt and pepper to taste

    For the Pasta:

    Pasta - Boiled Elbow Pasta
    Cheese - I have used a combination of Processed Cheese, Mozzarella, Cheddar cheese
    Seasoning - Chili Flakes

    How to make Cheese Pasta with Mayonnaise Sauce

    In a nonstick pan, heat butter, add the flour, cornflour, saute well. Slowly add the pepper, salt, and combine everything well.

    Cook on high till the flour is well cooked and blended well. Allow cooling

    Then pulse it well with a tsp of olive oil/cooking oil.

    To make the pasta:

    Boil the pasta with twice the water till done. Drain and toss well with oil, so that it doesn't clamp together.

    In a nonstick pan, add the mayo sauce, boiled pasta, salt, and pepper for taste, and add little water. Bring to boil.

    Then transfer to a serving microwave bowl, sprinkle grated cheese on top, along with red chili flakes, and microwave for a minute.

    Serve hot.

    Variations You Can Add

    Add Vegetables - Add sweet corn, capsicum, or sautéed mushrooms to make the pasta more wholesome and colorful.
    Make It Creamier - For an extra creamy texture, add a splash of milk or fresh cream while preparing the sauce.
    Add Herbs - Sprinkle dried oregano or mixed Italian herbs to enhance the flavor and give it a more classic pasta taste.
    Mild Version for Kids - Skip chili flakes and keep the seasoning mild for a kid-friendly version.

    FAQs

    Can I make cheese pasta without mayonnaise?

    Yes, you can absolutely make delicious, creamy cheese pasta without adding mayonnaise. You can replace it with Greek yogurt, cottage cheese, cream cheese blended with milk and some melting cheese.

    What cheese works best?

    It depends on what texture you are looking for and the sauce you make. I have used Mozzarella as it melts and makes it very cheesy. You can use Parmesan if its only for sprinkling on top.

    Can I reheat cheese pasta?

    Yes, you can absolutely reheat cheese pasta. However, please make sure you reheat on low or gentle heat to prevent the cheese from separating or becoming dry. I would recommend reheating on stove with a splash of milk or water, cooked on low flame to heat evenly. Else you can cover it with a foil and bake it in oven.

    How do I keep pasta creamy?

    If you want to keep the pasta creamy, its best to reserve 1/2 cup of the starchy pasta water before draining. Once you are done cooking, you can add this water to your sauce, along with heavy cream, butter, or cheese, to emulsify the ingredients. This prevent the sauce from drying out or sticking to the pasta.
