Hara Chutney or Green Chutney for Chaats is a popular chutney served as a dip or a spread with different dishes like chaats, sandwiches, starters. It is a healthy condiment with fresh coriander leaves and mint leaves.

First of all, this easy healthy chutney is a must when making chaats. I have always made different combinations of herbs. Each one is as different as it can get. Finally, I realized I have different versions for different dishes I serve. In contrast to this chutney, I have others like Mint Coriander Chutney, Coriander Chutney, Sandwich Chutney for spread.
If you are going to use this green chutney as a spread, you can use roasted peanuts or fried grams for thickness. I served this thick chutney for the Haridwar Street Food, along with Aloo Jhol, Dhaba Style Chana Masala, and a few other side dishes for the Haridwar wali Kachori. I have some starters like Chotu ki Pakode, Papdi Bada Dahi Chaat on the platter.
Finally, the whole platter was a lip-smacking experience. Though this chutney might sound similar to the other chutneys I have, it is different from my regular one. Above all, I am happy it fits the H for my A to Z Indian Condiment.

Ingredients
This is a No-Cook chutney where we use all fresh ingredients to make this delicious chutney.
Coriander Leaves - This is the main ingredient for this chutney. Use fresh leaves for the best taste. I have used a small number of mint leaves as well.
Fried Gram - To make the chutney thick, I have used fried gram. We can use roasted peanuts as well.
Other seasonings - This uses both kala namak and regular salt. Also, I have added sugar for that balance. This certainly adds a good taste to the chutney.
For Spice - Fresh green chilies are used for the spice. The quantity depends on your taste. I mostly make it spicy.

Instructions
Using fresh coriander leaves lends makes this chutney very delicious. Have all the ingredients ready and blend it in one shot for a quick chutney.

Wash and soak the herbs well to remove dirt.
Drain and chop the herbs.
Take the chopped green chilies, ginger with roasted peanuts in a mixer jar.
Pulse the ingredients a couple of times.
Next, add coriander and mint leaves to the jar.
Add little water as required to make it a smooth paste.
Transfer to a bowl, add salt, sugar, and kala namak.
Mix well and squeeze in the lemon juice.
Substitutions & Variations
If you don't have fried gram you can add roasted peanuts.
Use more mint leaves for a more minty flavour.
If you don't have kala namak you can skip it. You can add a little chaat masala as well if you want.
Equipment
This certainly is an easy dish to make as this is a no-cook recipe, we only need a mixer jar or a blender to make the chutney.
The smallest jar works out best as this recipe is for small measurements.
Storage
This Green Chutney for Chaats freezes well. I have frozen it in an ice tray for easy removal.
If we have to talk about the shelf life, then this stays good for a couple of days when refrigerated.
Expert Tips
Drain the leaves well after washing them. If we want the chutney to be thick, use only water in spoons. Add lemon juice after grinding and transferring to a bowl.

Ingredients
- 1/2 cup Coriander Leaves
- 2 tablespoon Mint Leaves
- 1 tablespoon Fried Gram
- 3 Green Chillies
- 1- inch Ginger
- 1 teaspoon Sugar
- Salt to taste
- 2 teaspoon Lemon Juice
- 1/8 teaspoon Kalanamak / Black Salt
