    Shahi Khichdi | Royal Mixed Vegetable Khichdi

    Shahi Khichdi is a rich preparation with rice, mixed lentils, and vegetables along with various roasted nuts included. This is a one pot meal even and very quick to make, even though it has a long ingredient list.

    I made not of this from Viji's space where she talks about this being the North Indian version of a royal feast and not our South Indian version of Kichidi. In the South, we call the upma made with semolina and mixed veggies as Kichidi. Whereas in North India, the gooey mix of rice and lentils along with spices, lentils, and vegetables is called as Khichdi.

    Coming to this recipe, her North Indian friend called this as Shahi because of the rich ingredients included in it. The ingredient list is quite long, though the procedure is very simple as everything is dumped into a pressure cooker and cooked to a soft texture. The final garnish of roasted nuts was a real feast. I served it with Pickle.

    Shahi Vegetable Khichdi

    Shahi Khichdi | Royal Mixed Vegetable Khichdi

    Ingredients Needed:

    1 cup Basmati Rice
    3/4 cup Toor Dal
    1/4 cup Chana Dal
    1/2 cup Split Yellow Moong Dal
    1/4 cup Masoor Dal
    Salt to taste

    Vegetables Used:

    1/2 cup Onions
    2 to 3 Green Chillies
    1 cup Potato
    1/2 cup Carrot
    3/4 cup Peas
    1/2 cup Cauliflower Florets

    For Tempering:

    1 tbsp Cooking Oil
    2 tsp Ghee
    1 Black Cardamom
    3 to 4 Cloves
    2 Green Cardamom
    1 inch Cinnamon
    2 small Bay leaf

    Spice Powders

    1 tsp Red Chili Powder
    1/2 tsp Coriander Powder
    1/2 tsp Cumin Powder
    1/4 tsp Amchur Powder
    A Pinch Turmeric powder

    To garnish finally
    Handful Cashew Nuts
    5 to 6 Almonds
    Handful Coriander Leaves

    How to make Shahi Khichdi

    Wash and soak the dals and rice together for 15 minutes. Drain and keep it ready.
    Wash and chop the veggies into bite size pieces.
    In the pressure cooker take oil and ghee. Temper as given.
    Add onions, veggies, and spices one after the other.
    Next, add the spice powders, combine well.
    Drain the rice and dals, add 5 cups water and salt to taste.
    Put the weight and cook for 3 whistles.
    Let the pressure goes. Mix well and garnish as given.

    Notes:
    I skipped cauliflower in all the khichdis that I have made till date as I didn't' think we would like the cauliflower taste in a khichdi

      I thought of trying a version of Shahi khichdi though I didn't do any research as what it is. Sounds simple enough to prepare and really sounds shahi with all that nuts' garnish and the flavors coming from spices used both in whole and ground forms.

      The first time someone called Upma a Khichadi I was quite shocked , but later read on it . For the North Indians yes , it is rice and daal . Vegetables have come in now - for the health element .
      The shahi Khichadi is indeed shahi with vegetables and nuts , sounds so wholesome and delicious with a mix of different dals and rice . Good pick Valli !

      Wow! That is quite a long list for ingredients, but very easily available in our kitchen. The kichdi sounds really rich with all those delicious toppings.

      Shahi khichid looks absolutely royal as the name says. That’s a delicious one pot meanwith veggies, nuts make a great garnish to the dish

      This is interesting kichadi with mixed lentils with the goodness of nuts. One thing I learned in this BM is, if the ingredient list is long and lengthy it means the recipe is very simple. 😉
