Rajasthani Bhedawi Puri aur Sabzi Thali features a delicious deep fried poor stuffed with urad dal spiced with roasted whole spices. This makes a very sinful meal paired with easy aloo subji.
I read about Bhedawi Puri in some online google doc and made a note of it, planning to read more on the puri and its history. As luck would have it, I misplaced the link and all I could see online is the recipe from Tarla Dalal's site.
From the various stuffings I have read over the period, I realized that Urad dal is used as stuffing apart from being the main ingredient in Dal Makhni. Similarily we use Urad dal in the idli and dosa in the south.
I followed the recipe without any modification as I had no other source to refer to. I normally don't worry about wheat flour or maida. However, for this series, I had changed the flour to wheat flour.
I made this meal for our dinner and decided I would make some sweets. The instant Radri Malpua came about because I just didn't have time and had to make something quick. It was so good and the meal was so delicious overall.
I had noted a couple of green chili pickles for the parathas, as well because Hubby dear has been asking me to make some. So this version was a new one and it was so good for an instant one.
Today's thali features Bhedawai Puri in the Rajasthani Bhedawi Puri aur Sabzi Thali.

Urad dal pooris are popular in almost all states , with slight differences , the aaloo sabzi too is very popular all over North. The taste and ingredients change with each state .

I have made instant malai Mirchi pickle from Rajasthan before, it was so delicious. Your chili pickle reminded me of that one. There is so much of effort that has gone into this thali, love that malpua, I will check out the recipe soon.
