    Dhaba Style Dal Fry is a delicious dal made with a mix of dals. When I was planning the Punjabi Thali, I decided I would pick a dal, since I have already shared a couple of Dal Fry, Takda Dal,

    I had this in my collection of dals, that I have collected over the years. When I was going through different recipes, I felt even the smallest change seem to change the final result. I have shared the Matar Paneer Masala that I posted on that day.

    This is the Punjabi Thali that I already shared last month.

    How to make Dhaba Style Dal Fry

    In a pressure cooker, take all the dals and wash well. Add three times water along with turmeric powder, pressure cook till soft. Wait for the pressure to fall down.
    In a nonstick pan, heat oil and ghee, temper with cumin seeds, asafoetida, and then add the chopped green chilies, dry chilies, grated and crushed ginger, and garlic. Saute for 2 mins.
    Add the chopped onions, saute till browned. Once the onions turn colour, add the cooked dal, enough water along with salt. Next, add the chili powder. and simmer till dal thickens.
    Add finely chopped coriander leaves.
    Serve with rotis.

    Ingredients

    For Pressure Cooking:

    • 3 tbsp Toor Dal
    • 3 tbsp Moong Dal
    • 3 tbsp Chana Dal
    • 3 tbsp Urad dal
    • 3 tbsp Masoor Dal
    • 1/4 tsp Turmeric powder
    • 2 cups Water

    For Tempering:

    • 1 tbsp Ghee
    • 1 tbsp Cooking Oil
    • 1 tsp Cumin seeds
    • A pinch Asafetida
    • 1 tsp Ginger finely grated
    • 1 tsp Garlic freshly minced
    • 2 nos Green Chilli chopped
    • 2 nos Dry Red Chillies broken
    • 1/2 cup Onion finely chopped
    • 1/2 tsp Chilli Powder
    • Salt to taste
    • 3/4 cup Water as required
    • 2 tbsp Coriander leaves finely chopped

      I love any kind of dal. What you said is absolutely correct, any tiny bit of change makes the dal taste completely different from what you made before.

      Love the thali pictures. This recipe is simple enough to make on busy a work day but sounds so flavorful. I love dal recipes that use different types of dal.
