We are finally on the last day of the Cooking Carnival Mega Marathon Series. These Mega Marathons are online parties where other food bloggers join to share their recipes and blog on all days nonstop. This Edition was a Cooking Carnival, with specific theme to the edition.
I had opted to do One Ingredient all of this month and my star ingredient was Potato. I know this is one vegetable that's globally loved and devoured.
Yet it was funny how my boys don't eat potato and I practically had to feed Hubby dear almost day after day with different potato gravies and endless pancakes for Konda at odd times. There were a couple of dishes that Peddu loved and wanted to repeat. And naturally, all the dishes were a hit and given a choice I might repeat, albeit many months later. I still have a huge stash of potatoes tucked in as Amma thought I will still be making more potato dishes. I will have to plan something to make.

To make it more interesting and challenging I decided to break up into different weeks, and the themes got shuffled depending on what I got ready. For a person who is not really keen on potatoes, 26 dishes were an overdose for sure. I have a huge collection of potato side dishes already across both my blogs. So I must confess I was shocked to see still so many to be covered. Some recipes were the same with different names, so those I left out.
For the final day, I thought I will complete with a dessert. I have adapted this from Priya Srinivasan again. It's an Apple stuffed Flatbread from Ireland also referred as Potato Apple Bread. This potato apple bread is made by stuffing the apples in a potato flour dough and pan fried. I served mine with chocolate sauce for Konda and she loved the last bite. Did you notice the first picture, well the art is by her and I know it looks so cute. What a lovely way to end the series.

Ingredients you will need!
- Potato - Use the regular variety available to you. I have used the white potato here. It is boiled to soft before being mashed. You can easily use russet potatoes to make these.
- Flour - We make the flatbread with All Purpose flour
- Apple - The season special apples that are crunchy tastes bests. I have used Kashmir Apples, you can use Granny Smith apples as well.
- Spices - We use Cinnamon for flavour
- Leavening Agent - Baking Powder lends the leavening to the flatbread.

How to Make Potato Apple Bread with Step by Step Pictures
Microwave the potatoes for 4 mins, soak and peel the skin. When it is still warm mash with a fork and add flour, salt, and baking powder to this mashed potato, and start kneading to make a smooth dough. Let the dough rest for 10 minutes.
While the dough is resting, wash the apple, cut it into thin slices, toss it along with the cinnamon powder and sugar.
You can also fine chop the apples and cook it along with sugar and cinnamon if your kids prefer that way.

When ready to roll out, dust the balls with flour and roll out into circles. Using a circle cutter, shape it out. Place the apple slices on the first disc, cover with the other one. Press the edges.
Heat a nonstick pan, when it is hot enough, add butter and slide a sealed bread on to it. Cook on a slow flame until the sides are browned well. Turn and cook the other side too. Flipping it over is quite tricky, so slide it to a plate and turn it over.
Transfer it to a serving plate, cut and serve with a generous serving of butter or fresh cream. I served it with chocolate sauce.

Tips & Variations
Instead of adding the apple as slices, you can chop into bite size and cook in a sauce pan to make it mushy. This way the apple filling will stick the flatbread more.

Apart from the Chocolate Sauce I have served with this flatbread, you can try other sauces I have shared in the post.
Equipment Needed
I have cooked the potatoes in a microwave and used a skillet to cook the flatbread. You would need a rolling pin and a board to roll out.
Storage and Make-Ahead Tips
You can store leftover potato apple bread in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or toaster oven to restore crispness.
Alternatively you can freeze this flatbread as well. Freeze cooked bread wrapped tightly for up to 1 month. Reheat from frozen in a skillet or oven - without thawing.
If you are rushed, you could make the apple filling ahead and refrigerate. Dough can also be made and refrigerate.

Yes. You can bake it at 375°F (190°C) for about 18-22 minutes until golden. Baking creates a softer crust, while pan-frying gives a crisp exterior. Both methods work well depending on texture preference.
