First of all, I have so many different recipes for making Aloo Matar and this is yet another wonderful easy recipe to make. Finally, this is a quick dish to make, so you need not plan for much!
Above all, this week I will be showcasing an interesting theme that will combine Potato along with a lentil or legume as the main ingredients. Furthermore, Potatoes Peas are the most frequently used ingredients in our cooking.

Ingredients
This No Onion No Garlic Side Dish for Poori is an easy Potato Peas Curry. I have used fresh seasonal produce and made a delicious side dish.
Vegetables - First of all, Potatoes and Peas are the main ingredients in this side dish. I have used frozen peas that I always stock. You can use dried peas that are well soaked and boiled as well.
For the Paste - Fresh Tomatoes are ground along with ginger and green chilies. This forms the base of the gravy.
For the Spice - I have used Red chili powder and the paste already has green chilies. Likewise, you will have to adjust according to your spice levels.
Spices - We use cumin seeds and coriander powder along with garam masala.

Instructions
The main ingredient used in this gravy is seasonal fresh peas. I have boiled both the vegetables in the microwave. I find it very easy to use the microwave to boil the veggies.
How to make Easy Aloo Matar
Prep Work
Wash and mark on the potatoes. Microwave for 6 to 7 minutes.
Soak in water for the skin to peel away easily. Peel the skin and cube it into 1-inch pieces.
Next, wash and take the peas, microwave for 5 minutes.
Take the tomatoes and green chilies. Grind to a smooth paste.
Making the Gravy
Heat a kadai or nonstick pan with oil.
When it becomes hot, add cumin seeds. When it crackles, add the turmeric powder and coriander powder to the oil.
Let the spice powders get fried for a minute.
Add the ground tomato paste and let it cook for 5 minutes.
Now add the cubed potatoes and combine well.
Let it cook on low heat until the oil starts to come out on the sides.
Add chili powder and salt. Once you mix well, add the peas and water as required.
Bring to a boil and simmer for 10 minutes.
When the gravy comes to a smooth consistency, add garam masala and finally chopped coriander leaves.

Substitutions & Variations
I have used fresh peas, however, you can use dried peas also. Just make sure you soak overnight and pressure cook well.
To make it richer, we can add cashew paste to the gravy. You can add other vegetables as well.
If you don't want to use the microwave, you can use a pressure cooker to boil the vegetables.
Equipment
We need a blender or a mixer to make the paste. Cooking pans for making the gravy.
Depending on how you will boil, you will need microwave vessels or a pressure cooker.
Storage
Certainly, this gravy stays good for a day when refrigerated. Likewise, the raw ingredients like the peas can be frozen and potatoes can stay good at room temperature.
If you are making it for lunch, you can very well leave it at room temperature for serving it for dinner.
Expert Tips
Microwave boiling is very quick and only needs 7 minutes of microwave time. Soaking it in water, you can easily remove the skin.
If you want the gravy to be thick, you can mash the potatoes to get mixed in the gravy.
You can make the paste ahead and freeze it as well.
Or you can make the gravy, store it for future use.
