    Pineapple Pudding | Quick Pineapple Custard

    Pineapple Pudding is something that was created out of a need to have something quick for the dessert. I had saved up some pineapple cut pieces, planning on making something for the dessert. I completely forgot that I am yet to make anything for this week's theme.

    Are you pudding me? literally got me thinking that I was kidding myself into thinking I have everything ready. So I had to resort to a simple dessert that was done under 15 mins time. Very simple dish and no fuss at all.

    I know I will be making this again as I am sure my parents and daughter would love this. Though the recipe I am sharing will only make dessert for two.

    Pineapple Pudding

    I only froze it for 10 mins, still, the pudding was very creamy and almost set. We licked it to the last bit and surely loved it!

    Pineapple Pudding

    4 tsp Corn Flour / Corn Starch
    3/4 cup Milk
    1 tsp Sugar
    3 tsp Condensed Milk
    1/2 cup Pineapple chopped
    Pineapple pieces for garnish
    Few Drops Pineapple Essence

    In a saucepan, take the corn flour, add the milk and mix well. Cook on medium flame. After few seconds, add sugar and cook till the mix starts boiling. This takes about 2 to 3 mins. Allow it cool completely.
    Take the corn flour liquid to a mixer, add the chopped pineapple and pulse to a smooth paste.
    Transfer to a bowl, add condensed milk, mix everything well together.
    Transfer to the serving bowl and freeze for 10 mins.
    Serve with diced pineapple pieces on top.

      In my opinion, the pudding had pineapple flavour and it wasn't bitter. Maybe you should try as the way I have made and check for yourself.

      Had followed your recipe exactly. But the pudding was bitter. Had a similar experience when I made pineapple milk shape as well. Both the pineapple and milk tasted good individually. Googled and found that pineapple with milk causes a reaction which results in the bitter taste, if fresh pineapple is used. If you could suggest any remedy I would welcome it wholeheartedly.

      Did you cook the pineapple over flame by any chance? I had cooled the cornflour mix completely before adding the pineapple. Also I consumed within 10 mins of freezing as I have mentioned. Its said that mixing fresh pineapple and dairy in a dish and consuming it after sometime maybe like after 30 mins or more, will make the dish bitter as pineapple breaks down the protein in milk and that causes a chemical reaction to turn into bitter.
