Shrikhand Sandesh or Yogurt Frozen Sandesh is my choice for Y in the A to Z Bengali Sweet Series. This is a delicious twist to the regular Shrikhand, where along with the creamy thick curds, you have the soft fresh chhana added. I have made this, even more, protein-rich and delicious by adding the nuts powder to the base. I chilled this in the Kulfi Mutki and it made such a sinful dessert!
As I had mentioned, when I shared the Ice Cream Sandesh, I had tasted only one dish in this entire series, actually, only 3 to 4 tsp and this was that.
When I had made Ice Cream Sandesh for the kids, Hubby dear wanted his share too. So I said I have another one and he can give his feedback after tasting it. On the first bite, he said it was excellent and was on to complete it when he suddenly asked where my cup was. I said I had made only one serving, so he offered the rest. I had a few spoons and gave it back to him, quoting calories.
It was so good seeing all of them enjoying the treat. Only I didn't reveal to anybody that it has paneer in it. Somehow, the mindset doesn't accept a sweet dish to have paneer in it. I revealed to Hubby dear after he completed that it not only had paneer, it was shrikhand too. Though he was shocked, he said he loved it and won't mind it being repeated.
So here you have, yet another fusion turning out to be a great hit. I loved the clicks and have gone overboard sharing so many. It was really worth it as this letter had only Yogurt written against it and I just couldn't find any regular Sandesh made or starting with this letter. I keep thinking I must document how we arrive at the final dish. In this case, when I couldn't find anything suitable, I thought I would simply add curds to the Sandesh and try serving as frozen yogurt. Only then I suddenly remembered Shrikhand and it was such a surreal feeling!
I love Shrikhand and have made so many varieties already. This one makes a wonderful twist as well.
As with all Paneer Based Bengali Sweets, you need to make fresh soft Paneer/Chhana. Since this is blended you need not knead it fine as with the rest of the Sandesh types.

Yogurt Frozen Sandesh | How to make Shrikhand Sandesh
Ingredients Needed
For the Kesar Nuts Shrikhand
1 cup Hung Curds / Thick Yogurt
3 tbsp Sugar powdered
2 pinches Saffron
1/4 cup Milk warm
A Pinch Cardamon Powder
1 tbsp Pista powdered
1 tbsp Almond powdered
For the Malai Sandesh
1 cup Paneer / Chhana / Cottage Cheese
1/2 cup Sugar powdered
For Making Kesar Shrikhand
Line a muslin cloth over a sieve. Pour the thick curds into it and let it sit in the refrigerator overnight
Soak the saffron in warm milk. Blend the nuts to the powder.
Transfer the hung curds to a bowl. Save a few saffron strands, and add the rest of the saffron along with milk and nuts powder to the curds and blend well.
For the Malai Sandesh
Take the chhana and mix it with sugar. There is not much kneading required here as we will be blending it.
Assembling Yogurt Frozen Sandesh
In a mixer/blender, take the chhana along with shrikhand and pulse for a couple of times, until you get a creamy liquid.
Transfer to the serving Kulfi Mutki and garnish the saffron and nuts on top.
Refrigerate overnight or for at least 4 to 5 hrs until serving.
Serve chill
Notes
This has a delicious shrikhand taste. Unless told, one can't identify the chhana in this.
