X'citing Dark Chocolate Sandesh Truffle is my choice for X in the A to Z Bengali Sweet Series. As it's known we don't have anything regional starting with X and so I decided I had to play with the starting letter.
To me or rather my kids, there is nothing more exciting than dark chocolate and on top, if I am to offer it as truffles, nothing would last for long. So I decided to go ahead with this and this dark chocolate truffle is similar to the Hot Chocolate Sandesh Truffle and White Chocolate Sandesh Truffle. In fact, I made all three together, keeping the outer layer as Dark Chocolate Ganache for both.
If you noticed that the pictures are the same as Hot Chocolate Sandesh Truffle, you got it right! The fact was since I made all three together and set it in the fridge, I forgot to alert Hubby Dear to caution the boys that I am yet to click pictures. I had kept it in an order to know which was what.
However, when I get back home in the evening, the entire plate was disturbed and the boys drooled over it, waiting for me to click pictures. Though their father didn't let them know, they thought that I would have told them to eat had I clicked pictures. That was so sweet of them, though, on another hand, I had no clue which was what.
I risked slicing through two truffles, barring the strong opposition from them. They wanted to eat the truffle intact. After finding two truffles were the same, I had no clue. So I went ahead clicked the same shot for both the posts. Of course, I didn't tell them there were two varieties in there as they had to share among the three. So here's the secret out!.
As with all Paneer Based Bengali Sweets, you need to make fresh soft Paneer/Chhana and then knead it well. The additional step you would be doing while making Sandesh will be finally kneading with half of the sugar quantity before cooking it.

X'citing Dark Chocolate Sandesh Truffle
Ingredients Needed
For the Outer Chocolate Layer
1 cup Dark Chocolate Compound
2 tbsp Cream
1 tbsp Butter
For the Sandesh stuffing
1/2 cup Paneer / Chhana / Cottage Cheese
2 tbsp Cocoa Powder
1/4 cup Sugar powdered
3 tbsp Dark Chocolate Ganache
For the X'citing Dark Chocolate Layer
In a microwave-safe bowl, take the chopped white chocolate compound, microwave for a minute.
Remove and whisk to melt the chocolate.
Add the cream and butter and microwave again for a minute. Keep it aside.
For the Chocolate Sandesh stuffing
Take the chhana after kneading and mix with sugar.
Heat a nonstick pan and gently cook the chhana for 5 mins, remove and add the remaining sugar.
Then add the cocoa powder, dark chocolate ganache and combine everything well.
Make small balls of the Sandesh and drop them into the melted chocolate compound.
Carefully remove using a fork, after shaking away excess chocolate.
Refrigerate until firm before serving.

I have been laughing reading your post . When I need to keep something which should not be disturbed I normally keep in a box and then put them on the bottom shelf,,,right at the back ! You see it is a effort bending down and checking what is at the back!

The boys have me in splits. But they are well trained are they not? They did not taste them. I know hiding something from kids is an effort. These beauties will entice anyone to eat them but I appreciate that the boys did not touch them. Their self-control or is it Mamma control is awesome.
