    Potato Apple Bread | Apple stuffed Flatbread from Ireland

    We are finally on the last day of the series and I simply can't believe that I have reached this day. When I started I was still very skeptical if I will ever complete the series or not. This was the first time I have ever started without anything being done except the list, that was ready a long time ago. I had opted to do One Ingredient all of this month and my star ingredient was Potato. I know this is one vegetable that's globally loved and devoured.
    Yet it was funny how my boys don't eat this and I practically had to feed Hubby dear almost day after day with different potato gravies and endless pancakes for Konda at odd times. There were a couple of dishes that Peddu loved and wanted to repeat. And naturally, all the dishes were a hit and given a choice I might repeat, albeit many months later. I still have a huge stash of potatoes tucked in as Amma thought I will still be making more potato dishes. I will have to plan something to make.
    To make it more interesting and challenging I decided to break up into different weeks, and the themes got shuffled depending on what I got ready. For a person who is not really keen on potatoes, 26 dishes were an overdose for sure. I have a huge collection of potato dishes already across both my blogs. So I must confess I was shocked to see still so many to be covered. Some recipes were the same with different names, so those I left out.
    For the final day, I thought I will complete with a dessert. I have adapted this from Priya Srinivasan again. It's the Potato Apple Bread, a flatbread from Ireland. This potato apple bread is made by stuffing the apples in a potato flour dough and pan fried. I served mine with chocolate sauce for Konda and she loved the last bite. Did you notice the first picture, well the art is by her and I know it looks so cute. What a lovely way to end the series.
    I thank my fellow BM buddies for doing this Mega Marathon with me. I know I still have lots to catch will do soon.
     
    Potato Apple Bread

    Ingredients

    • 1/2 cup Potato
    • 1/4 cup All purpose flour
    • 2 pinches Baking powder
    • 1/4 tsp salt
    • 1/2 an apple
    • 2 tsp sugar
    • 2 pinches Cinnamon

    Cooking Directions

    1. MW the potatoes for 4 mins, soak and peel the skin. When it is still warm mash with a fork and add flour, salt, and baking powder to this mashed potato, and start kneading to make a smooth dough. Let the dough rest for 10 minutes.
    2. While the dough is resting, wash the apple, cut it into thin slices, toss it along with the cinnamon powder and sugar.
    3. When ready to roll out, dust the balls with flour and roll out into circles. Using a circle cutter, shape it out. Place the apple slices on the first disc, cover with the other one. Press the edges.
    4. Heat a nonstick pan, when it is hot enough, add butter and slide a sealed bread on to it. Cook on a slow flame until the sides are browned well. Turn and cook the other side too. Flipping it over is quite tricky, so slide it to a plate and turn it over.
    5. Transfer it to a serving plate, cut and serve with a generous serving of butter or fresh cream. I served it with chocolate sauce.

      The potato Apple combo is unique , perfect way to end the series . It sure is hard to do 1 ingrdient for complete month but definitely interesting . Konda 's art work looks great .
