    Mixed Vegetable Tawa Sandwich ~ Easy Kids Lunch Recipes

    We are on the second day of cooking lunch box recipes for kids. There are always certain dishes that you might not consider as lunch box dishes, while the kids think otherwise! There are many such dishes and one among them, is the sandwich.
    Konda loves sandwiches, especially with paneer stuffing. I mostly also try to add cheese and she simply loves it. Today's dish is with mixed vegetables and it makes a good way of getting these veggies consumed by the kids.
    If you are packing for the afternoon, ensure the stuffing is almost dry. You can either wrap it in a tissue and then in a foil. This will prevent the sandwich from getting soggy,
    While we talk about lunch box recipes, I also remember the meet I had with my fellow BM friends. It was wonderful meeting them all.

    Mixed Vegetable Tawa Sandwich

    Ingredients Needed

    Bread Slices - as required for sandwiches
    Carrots, Peas and Potato - 1 cup
    Onions - 1/2 cup
    Tomato puree - 1/2 cup
    Ginger Garlic paste - 1/2 tsp
    Mint leaves handful
    Coriander leaves handful
    Red chili powder - 1 tsp
    Coriander powder - 1 tsp
    Salt to taste
    Turmeric powder a pinch
    Garam Masala - 1/2 tsp

    How to make the Sandwich

    Prep and boil the vegetables till done. I mostly do in MW, you can pressure cook as well. Add just about enough water to boil the vegetables, if excess, ensure you evaporate the water.
    Heat a kadai with oil, saute the onions till they turn colour, then add ginger garlic paste, saute till brown.
    Then add the tomato puree, cook well. Next all the mint leaves, coriander leaves, continue cooking.
    Once the mix is cooked well, add the boiled vegetables along with the spice powders and cook to get the mixture dry.
    Allow to cool and slightly mash it, but ensure the vegetables are seen.
    Heat a tawa, toast two bread slices on both sides. On one slice, spread a thin layer of the vegetable stuffing and press the other one over this. Press it well so that it gets stuck and as well the bread becomes crisp.
    Serve with tomato sauce.

     

    Notes:
    Ensure the masala is dry, less when you pack this for brunch or lunch, the sandwich will get soggy.
    Don't skip the mint leaves, the combination of mint leaves with potatoes takes us to a different level.

      so interesting how sandwiches are interpreted different ways by different cultures. Here in America sandwiches is the most common food most kids go to school with as lunch if they are bringing food from home.
