Kodo Millet Paniyaram or Varagu Arisi Paniyaram is a traditional South Indian breakfast. This is a no rice dish, you can make it more healthy with onions, carrots to make a delicious meal anytime!
We are very fond of paniyaram and make it once a week. Paniyaram is a wonderful choice when you have excess batter on hand. However, we often make fresh batter for this dish.
Kuzhi Paniyaram Recipe is a popular one from the Chettinad Cuisine. In Andhra, we call it Gunta Ponganalu and it is known by Paniyaram Recipe in Kanada and Appe in Kerala. One dish so many names!
Making this requires a special gadget the paniyaram pan or the appe pan. A very healthy dish as you can practically make it without much oil. We can season and temper with different ingredients to have varieties of paniyaram dishes.

Instructions for making Kodo Millet Paniyaram
For the Batter
We wash the ingredients and soak separately for at least 3 to 4 hours.
When ready to grind, drain to grind to a smooth paste. Mix well and let it ferment overnight
The fermented batter can stay well 2 to 3 days when refrigerated.
Making the Paniyaram
Grease the Paniyaram pan and season the batter with other ingredients.
Make in batches and serve with a side dish of your choice!

Ingredients
Ingredients for making Kodo Millet Paniyaram
For the Batter
- 1 cup Kodo Millet / Varagu Arisi
- 1/4 cup Urad Dal
- 1 tsp Fenugreek Seeds
- 1 tsp Salt
- Cooking Oil for cooking
For the Masala
- 1 cup Onions finely chopped
- 2 - 3 nos Green Chillies
- 1/2 cup Carrot grated
- 3 tbsp Coriander Leaves
- 1/2 tsp Mustard Seeds
- 1/4 tsp Urad Dal
- Handful Curry Leaves
- 1/2 tsp Cumin Seeds
- 1/2 tsp Chana Dal
- 5 Cashew Nuts broken
- Salt to taste
- Cooking Oil for cooking

How to make Varagu Arisi Paniyaram
For the Batter
- Wash the millets and urad dal with fenugreek seeds in water separately for at least 3 to 4 hours.
- Drain completely and grind the urad dal and millets separately in a mixer.
- Grind both to a smooth paste and mix both batters well after adding salt.
- Let it get fermented overnight or at least 8 hours.
- When the batter is well fermented, mix with a ladle.
- This can be refrigerated for at least 2 to 3 days.
- You can skip adding water at this stage.
Making the Paniyaram
- When you are going to make the paniyaram, take the required amount of batter you require.
- Check if the batter has the dosa consistency, add water if required.
- To the bowl, add finely chopped onions, grated carrot, green chilies.
- In a small pan, heat a tsp of cooking oil and temper with mustard, urad dal, chana dal, curry leaves, cumin and mix well.
- Pour this over the batter.
- Grease the Paniyaram pan with cooking oil, simmer and pour to fill the dents.
- Sprinkle few drops of oil, cover, and cook on low flame till the bottom gets cooked.
- Using the wooden stick flip to the other side.
- Cook till done, remove, and serve with side dishes.

I make idlis and dosas all the time with millets but somehow never tried paniyarams with the batter. Paniyarams in general are loved at our home and your version definitely makes them a great breakfast / snack item.
